Re: Right motor for KK Of course, I just purchased the 40 lb....... Well, seeing as I have both the 6" and the 8" baskets, Dennis is sending me some extra shafts so I guess I will just have to make sure I get them good and tight! Somewhat disappointing, haven't even used it yet but no point in returning it for exchange as I had to pay big time shipping costs to the Island...... T Rex

Did a quick and dirty rib steak yesterday. Heated the KK with Royal lump charcoal, brought her up to 550F and 2.5 minutes twice on each side, top grill.... Put the Thermapen in and it read 125F soooooooooo, off it came, delicious! The KK at 550F No problem getting sear marks.... Forgot the plate shot........ T Rex

I enjoyed the last Loaf Pan chicken so much I just had to try it another time to see if I was just "lucky" with the other one.... Man the KK works well, every time...... Ready for the KK Resting after 1 hour and 15 minutes at 350F dome Final product........ The skin was crispy on the top and mushy on the bottom....... however, we do not eat the skin (sorry FireMonkey) so the point was moot..... These are the juiciest chickens one could possibly cook! Hey Syzygies, thank you for taking the time to post your most informative response. I had concerns with the cheaper thinner stones as well as how long it would take to properly heat a thicker one hence, the .75" stone Fibra-ment makes coupled with their years in business, got my attention. The stone that came with my KK is 13" and does not have the "glossy" finish others have referred to. Mrs. T Rex has had a stone for baking bread in our gas oven for many years which has served us very well however, it is square and I feared as a consequence would not provide even heat distribution in a circular environment like a KK...... Soooooooooo, Fibra-ment it is! As we cannot purchase one locally, we will do so on-line and when the "snail mail" arrives............ we will give it a go and post pictures of the results. Hi all, I am contemplating purchasing a Fibrament - D 15.5" X .75" pizza stone and I have a couple of questions: 1. Does anybody have any experience with these pizza stones? 2. Will the size be OK at 15.5" diameter? Thanks all in advance. T Rex

Re: Need to try this Hey Larr, this is a crazy simple way to do chicken and you would not believe how tender and juicy the bird turned out. I used to do the Drunken Chicken thing until I got the KK....... never again! It is much more fun to DRINK THE BEER ......... T Rex

Wow Hey Larr, outstanding! Am I correct in assuming that this was a hot cook? I just put on a small "Organic" pork shoulder......... I am going to do it at 275F to see if it will cook a bit faster, the Doc does his up to 300F and has had good success............. T Rex

Prawing April 16, 2010 Well, I went out yesterday and soaked the Prawn traps for around three hours....... Some of the spoils.... I ended up with 14 lbs. of tails for my efforts, my buddy took home around the same. He was having a BBQ for his co-workers so I sent him home with the larger ones....... Here is a picture of the latest ribs I did on the KK. It makes me wonder how I ever enjoyed ribs before I purchased a KK. Set the KK at 225F for 4.5 hours, it could not be simpler! T Rex

I got the idea from Chris Lilly's book....... Got the KK to 325F and cooked the chicken for approx 1.5 hours. Incredibly juicy and the beer was consumed this time........... Placed the bird on the KK Let the KK do its' thing for 1.5 hours A peek about 1 hour in The end result...... Definitely a repeat recipe... T Rex

Hey 'chops, I hear you. I will be doing another one this week.... and will post results using all the advice. I did a couple Rib-eyes that turned out very well yesterday, sear marks and all...... I haven't posted pics of them as Mrs. T Rex has an aversion to fat so during the trimming process, I was left with some funny looking pieces of meat after flipping them a couple of times......... Outstanding! Hey Larr, a picture perfect bird, I would dedicate 4 hours of my time any day for an end result like that........ and gravy to boot! Mrs. T Rex and I found the gravy had a light smokey flavor and we quite enjoyed it that way as something different. With our next bird I plan on a Kahlua/Apricot glaze towards the end of the cook period which will make the gravy interesting as well. Great job! T Rex

Thanks for all the tips, I am already looking forward to my next "Butt"... I don't know if I am blowing my brains out but I have been cleaning the KK after every use and I actually take the charcoal basket out, lay it aside and blow it with a little cordless leaf blower to get all the ash out.... works like a darn but now I am wondering if it is necessary..... Sunny, sunny, sunny here today, Rib-eyes for supper tonight! T Rex
