Nice job Larr Wow, nice job Larr. I didn't want to ask what a Pernil was, looks a lot like a pork shoulder............ I think the gravy took it over the top! T Rex

Re: Herb Garden Great job Tucker, much more organized than ours which is spread out in our flower beds, back deck, etc........ If Mrs. T Rex sees this, guess what I will be doing over the next two weeks........ or what I won't be doing if I don't get one built! T Rex

Man! These house sparrows are vicious!
T Rex replied to cruzmisl's topic in Jokes, Ribbin' & Misc Banter!
Hey Cruzmisl, the best attractant I found when I lived in Alberta was my Purple Martin house! Those little buggers would start nesting before the Martins arrived and filled the condo cubicles with so much crap that the Martins couldn't use them......... My solution, .177 cal............ T Rex -
As Primeats stated.......... X100 T Rex

I went with a 14" Fibrament with the stainless pan to use on the BBQ. I would of gone with one of Dennis' however, I found out too late that they are the same specs as Fibrament...... why would I not be surprised... The shape was the result of spreading the dough out on the peel and trying to maximize the space.......... T Rex

After looking at some of the great pizza pictures on this site, Mrs. T and I thought that we would give it a go........... As this was primarily Mrs. T's undertaking, she was supposed to post this thread however, she hasn't figured out how to post her Avatar or pictures for that matter. I guess a "tutorial" would be in order over the next couple of days................. We warmed up the KK over an hour using Royal Oak lump and after the KK had been at 600F dome for about 30 minutes we decided to "git her done". The pizza ready for the KK. Lots of fresh Basil, mushrooms, onion, etc... The KK at 600F dome The finished product, forgot to take a picture on the KK...... This could not have been easier and and as "Tony the Tiger" would say, it tasted "terrrrrific"! T Rex

Hey, considering the last response, things have gone fairly well.... Here is a pic just before the Brontosaurus ribs came off the KK Another picture of the ribs just before carving After much carving.... And believe it or not, leftovers for T Rex tomorrow....... Best ribs we have ever had, MERCI DENNIS....... T Rex

Well, Mrs. T Rex suggested that she might like some Brontosaurus ribs for dinner....... (Hell yeah, as long as I don't have to kill it)....... Sooooooo, I thought we could start here and hope I make it to the finish line............... (Single malt....... two finger drink, index and little finger in a square crystal glass, neat, room temperature, no ice) So, I went to the market and while I was somewhat disappointed in the way the ribs were trimmed, I wasn't about to disappoint Mrs. T Rex. This was the starting point Brontosaurus ribs...... Everything is now in Dennis' hands........... More to follow.......... T Rex

Re: Nice job! T Rex, Thanks for the kind words! Temp was 250 for 4 hours. I see some of the guys are making fun of you about your platters from other posts. Better the platters than the food.......... T Rex

Beautiful color choice, you will be receiving a lot of compliments on that baby........ I found a Thermapen to be a very useful instrument that also has a lot of other uses around the house, something you might want to consider...... T Rex

Nice job! Nice job on the ribs, how long and at what temp? They have a fabulous smoke ring on them. Oh yeah, nice platter! T Rex

Wow, what a great looking KK, you must be very proud........... I see Johnnyboy has already spun his magic. Something to remember, "the best is yet to come"! T Rex

Living on the ocean, we have also done our share of Oysters and yup, also ruined a BBQ....... The way we used to do ours is to place them on the BBQ with the round side down, wait until they pop, use two forks to pop off the top shell, pour in some garlic butter and wait for it to start to bubble....... I tried putting the Oysters on a bed of rock salt inside a baking sheet to keep them stable so as not to lose any nectar but quite frankly this is a pain in the .............. The best way I found is to either microwave them or put them on a baking sheet in a hot oven until they open, take off the top shell, pour in a little garlic butter......... no muss on fuss. We have not used a BBQ since we perfected the above methods. I love my KK and I would not subject her to Oysters even though I am sure that you could do so quite easily using a drip pan as Amphoran suggested...... T Rex

Well, I thought I would do a couple of Rib-eyes for din din, glad I did! I lit the KK with a combination of Royal Oak 25/75 briquette/lump at 4:00 pm and let her slowly rise to 550F dome over the next hour or so...... These were not the thickest so I went 1.5 minutes twice on both sides and the Thermapen read 127F on the thickest parts and 122F on the thinnest....... yup, off they came......... Old habits are hard to break....... (green platter) Just finishing off the second side Some corn bread warmed up on the KK, peas and steak.... Forgot the "wine" shot so I had to go back for this one..... outstanding I was initially hesitant to do steaks fearing the sear marks might be a challenge, well........ you be the judge! T Rex

Well, so far with my limited experience I have used several different kinds of charcoal, BGE, Wicked Good, Royal Oak and one other I can't remember. Wicked Good is probably my favorite however, it is stupid expensive where I live, like $43 a bag with tax. I mostly use Royal Oak Charcoal from Walmarty like FM does and I have no complaints....... Like FM, I also like to use a chunk of fruit wood for additional smoke flavor although some might go so far as to call my "chunk" a "log"....... I just finished cooking a couple of Rib-eyes over Royal Oak charcoal with a "chunk" of Mesquite.......... outrageously good! T Rex

Great choice with the ribs TNT and congrats on the purchase. I have now had mine for a couple of months and haven't even scratched the surface of what I want to do with it this summer. Plan on something like 4 to 4.5 hours at 250F, take some pictures and ENJOY! T Rex

I have found a much simpler approach which is also enjoyable....... have an extra glass of wine or a couple extra beer and everything tastes better....... Hmmmmmm, based on my culinary skills, I guess I now know why my alcohol consumption is what it is...... Come to think of it, it has been substantially reduced since I acquired the KK.......... T Rex

Hi, I found an interesting recipe in Rick Browne's cookbook on doing BBQ Duck, on the the BBQ. My only concern is the amount of fat/grease that will result from cooking a duck, not what will fall in the drip pan but what will end up on the walls and dome......... Soooooo, has anybody done a duck on the KK and if so, just how messy was it and how did you clean the KK afterwords? Thanks in advance, T Rex
