    TW - nice job... I'm dying for some porkroast over here... wife's got us eating vegetarian for a couple weeks and it's killing me. First thing I'm doing when this "fast" is over is roasting up a coupla butts like those...

    And another thing... you know the part about cranking the draft wide open and letting the temp go crazy? I did that once.... now, I have a completely different beast in my backyard... but when I did that to my cooker it burned away the net-backing from the tiles and it wasn't soon after that they started to drop off.

    I'm sure that won't happen on a komodo... but it's still probably not a nice thing to do to your grill. ;-)

    Sweet roasts, though. Dang, I'm starving.

    Totally not necessary - I've never used one. I've found that once temps stabilize, they don't fluctuate much... so I've done plenty of overnights with no guru and no problems. Well, except the general problem that my cooker doesn't like to sit below 300F. Hehe.

    On the other hand, it does look like fun.

    And if you really want to geek out, Deej has all kinds of modification projects for you.

    Hi Dennis. This seems like a good place to ask this. I just had to re-tile my mexi-K dome AGAIN this weekend (an incredible pain in the A$$, by the way). At this point I have had to retile 90% of my kamado. Anyway, when I retiled the first time I used an acrylic (?) tile adhesive from Home Depot. I retiled mostly the rear half of my dome 3 years ago. This time, the tiles on the FRONT half were loose and needed to be re-done.

    Anyway, I noticed that the tiles I re-did myself 3 years ago are ROCK SOLID. They will not budge. (this is true of the base tiles I re-did last year as well). So I needed to pop a couple off during my re-tile, but they would not friggin' come off... had to use a screw driver and work them off slowly with a lot of force. The 3-year old acrylic adhesive has a dense "rubbery" texture and is darn near un-budgeable.

    The tiles I replaced this time were from the original "factory" tiling... it appears that the adhesive they used was a sandy beige grout-like material. This stuff deteriorates over time and eventually the tiles just slough off like mange.

    So that's a long winded way of getting to my question:

    What kind of adhesive do you use when you tile the KKs?

    Because from what I've seen, the adhesive used by other manufacturers is inadequate for the long haul, whereas the stuff I used for my repairs looks like it will stick for good.

    If you use the imageshack toolbar (install just below the posting text window) it even has an image re-sizer built right into the tool bar. And FYI' date=' the medium fits perfect - small mem size and correct for window.[/quote']

    I didn't even notice the imageshack toolbar before... cool. So you don't have to go to Imageshack directly to re-size images. Sweeeeet.

    Actually, when you upload to ImageShack, you get a page of different links to copy/paste into your message. If you copy the link called "Hotlink for forums (1)" or "Hotlink for forums (2)" it will post the full size image, not a thumbnail.

    Also, if you go to http://imageshack.us directly, you can choose to re-size the image (640x480 or 800x600 best for forums) when you upload. And then, of course, use the "Hotlink for forums" link to paste into the message.

    Here's what they look like:

    Technique varies. I cut the tops off the jalapeños, scoop out the membranes/seeds with a carrot peeler, stuff with a chilled stick of cream cheese (cut from a brick), wrap with bacon, pin with toothpick, and then roll in a nice bbq rub. Some folks do 'em low n slow. I do mine hot and fast. 350-400deg, 30-45min.

    So I'll give you the answer:

    You had inadvertantly checked the box called "Disable BBCode in this post", which disabled the quote code. The box shows up below the message window, at the bottom of the compose message screen in a section called "Options".

  8. Should I tie it up?

    I don't know. I had a cookie sheet I was going to move it to. Grabbed a leg and it came off. Grabbed a wing and it came off. Finally got wise and lifted it by it's body cavity... but as you can see it did sorta fall apart.

    I have zero experience with a meat hanger so I'd have to defer to other experts out there. If it matters, this was a fresh, never frozen turkey, which in my opinion is the only kind you should ever use...

    As I said, this was my first turkey... incidentally, we had just gone to the fair a few days prior and I had enjoyed a giant turkey leg there... but my kamado'd turkey legs were SO much better...
