Raise the temps higher at the end if cooking at a low temp. I don't use any smoke wood with poultry either, so the color is not from smoke. TheNakedWhiz Posted February 27, 2008 Report Share Posted February 27, 2008 Another thing you can do is to place the bird in the refrigerator, uncovered for 24-48 hours.
