Then there is the low and slow method. Cook between 220 to 250 until an internal temp of about 185 to 195. The time on this is unpredictable, but ballpark about 1-1/2 hours per pound. You can actually get a moister result with the fast cook, but the slow cook is a classic bbq technique. If you search these forums you will find an enormous wealth of info on briskets!
