MacKenzie Posted September 14, 2019 Report Share Posted September 14, 2019 Most of my cooks are on the main grate, except for pizza which I do using the KK baking stone on the upper level. You will find that the distance from the fire to the grate is bigger than on the BGE and therefore things cook more like they are in an oven, don't need so much about things burning before they cook. tony b Posted September 14, 2019 Report Share Posted September 14, 2019 To be clear - there are 4 levels in the KK: Upper, Main, Lower and Sear (upper grate upside down on the charcoal basket handles). Upper: pizza and spatchcocked chickens. Main: Almost everything Lower: Normally where I sear meats. Main use is it's covered with foil as the heat deflector for indirect cooks on the Main and Upper grates. Sear: I rarely use this setup anymore.
