Ha! So true! All mine, all mine! I make my wife crazy always trying to give her that "ever so slightly bigger piece"! Not so with most seafood... -
I've been meaning to say Congratulations to @Pequod for being featured in the recent "Hot from the Pit" newsletter! I had seen your ciabatta post here, but not that beautiful tri-tip - man, that's a sear! Well done, fella!

I was happy with our Tuesday evening meal. KK came through... Wagyu strip steak, asparagus(sorry, I keep posting pics of asparagus, but it's in season - along with broccoli and cauliflower, but somehow only the asparagus is getting posted...and yes, we like it charred), shiitake mushrooms sauteed with ghee, garlic and good sherry, and not shown baby carrots. I did the two level cook for the steak and was well pleased with that - I'm getting more comfortable with that method. Okay, I'll confess, I also sous vide a little lobster tail for myself with Joule, as wifey doesn't like lobster! Seared it on the fire afterwards with the steak. Shockingly, everything timed out perfectly. -

Cut up an eight ounce Wagyu filet on a couple of skewers and added a couple more skewers of shrimp... Cooked all the way down low very fast. Turned out tasty, but almost overcooked the beef. -
I love bbq oysters at Drago in New Orleans, and Acme's version even more... When in New Orleans, definitely try both!!! And the best bbq shrimp po-boy is at Liuzza's By The Track!

Y'all are just awesome. What a fantastic job. Mrs. and me send our whole-hearted congratulations!

Wow, that Spice Lab price is triple per ounce compared to that IndoChine brand!

I agree one hundred percent. My experience is the same. If I ever order Fogo again, I would only get the black bag with smaller pieces. They don't make the difference clear on their website. I've had no complaints with the Rockwood.
-
@MacKenzie, How did you sear your steak - skillet, torch or KK? Glad you are happy with the Joule!

Great post, thanks. I got some super premium, and the chunks were just too big. Good to know the premium is better in that regard. They are a bit ambiguous on their website descriptions. I was thinking that the premium might be better size for our purposes, but now I know for sure by your experience. I will say, it is very sparky when lighting. I think I prefer the Rockwood, it's just a little small, but burns well.

I went to World Spice after I read this and found they were sold out now! I just recently bought it for the first time and we fell in love. I had bought a large jar which was three ounces. If it's going to be a year before more is available that is terrible. Good news is, Amazon has a little available in two or four ounce size whole berries. They're down to just a few on the smaller choice. We ordered three of the large ones, and it doesn't say that size is low yet... Just wanted to put this up here for anyone this side of the ocean that is panicking - Amazon to the rescue. I was actually surprised they had it. Looks authentic and reliable company. Hope this helps someone here.

An absolutely unforgettable, awesome concert! The "Wall Live" tour was incredible as well. My wife and I have seen countless hundreds of concerts in our lifetime, and the Roger Waters shows are one of only a few artists that we will travel far and wide to see as many times as possible. We even flew to London to see the Wall concert two nights at the O2 Arena. We caught seven shows all together of that tour. We only went to three shows of this more recent Us+Them tour. We're getting old.

Love your pond. How hard is the upkeep? My wife transplanted a bunch of day lilies next to a part of our drive, and unexpectedly up popped a bunch of those irises in that same bed. Really pretty.
-
It was great! Some of my better ribs. I thought the same thing - Wagyu fat dripping down on pork...yum... The concert flying pig is Pink Floyd's Roger Waters Us + Them tour last year... The LP cover is Pink Floyd's "Animals". The flying pig comes out during the song "Pigs (Three Different Kinds)".

Extra hole? What extra hole? Not on my belt...

That's a very nice story. I know you were smiling on the outside, and absolutely beaming on the inside. -
OMG, this is all your fault anyway!!! I've looked at those grills for years and had nearly forgotten them until you brought them up! Just when I thought I was out, you dragged me back in!!! Wtf, we may as well have fun with it... For F***'s sake, I'm going to resist buying a wfo, so Charlane doesn't leave me...!

I like this thread. I'll look forward to your thoughts on that charcoal. I ordered some of the same(the white binchotan was way out of my price range) to try, but they won't be shipping that to me until they fulfill the whole order including the grill. I've been using Rockwood and Fogo Premium and a precious little bit of Dennis' Coco char since I got my KK. The flavor of my food has benefited from the switch from mass market char.

Anything called Sucklebusters Hoochie Mama has to be great... I'm so glad y'all turned me on to the purple crack. Jesus, it is addicting. -
I've got a medium backordered through Kirin, expected arrival is "summer"... You can get a large sooner, "early June". Sorry, @tekobo, I meant Korin... In case you were going to look. I'm pretty sure this is the mothership for konro grills.
