  1. Here in Western KY Patti's 1880's restaurant, http://www.pattis-settlement.com/ , is famous for their 2" pork chops. I have treated myself to a few they are quite good. But now you can purchase there seasoning and sauce, http://store.shoppattis.com/saucesandseasonings.aspx . I must say the few I did on my GD before...., well you know, turned out better in my opinion, a little smoke always helps. I was just by there and bought a few more bottles, and thought I would share this info. Give it a try and let me know what you think. You won't be sorry.   2. My poor departed GD came with a regular grill. The new ones come with a porcelain grill, I think. From the pictures I do think the Billy Bar looks better, but for $5 I will give the Grill Floss a try on my weber, plus I will be ready for my future KK. Roy
  3. Thanks for the info, I just ordered 4 of them. I ordered online didn't get the back order info, but that's ok, as long as I get them, they are for christmas. roy P.S Interesting note, I asked this question over on the GD forum also, they all use the Billy Bar, none of them knew about the Grill Floss.
  4. I use wood chunks for all my low and slow, but for quick stuff like steaks (Jack Daniels), pork chops (maple)and chicken (orange) I use pellets in a foil pouch. Take a 6" X 12" square of heavy duty aluminum foil and fold in half. Then seal the sides by folding two or three times. fill with about 1/3 cup of pellets and seal the top. Poke a hole in one side with a toothpick and place on coals. It starts smoking fast works great using the T-rex method for steaks, put on coals after the sear. Roy

  6. Well, right now I am living the dream. She just had surgery and I have taken 2 weeks off from work to take care of her. See, when you dream the right dreams they do come true

  9. Here is an easy way to get the rub under the chicken skin. I think I may have gotten this from Cooks Illustrated. Simply add EVOO to the rub to make a paste. It smears under the skin nicely. I then use BBQ Delight Orange pellets for a nice light smoke flavor and a gorgeous orange skin. Picture to follow, still too new to post pictures Roy
  10. Thanks all for the welcome, she does like the tiles, but she is the tightwad of the family. I actually looked at a tiled cooker at the time I bought my GD but was chased away by customer service issues. I have been well pleased by the support by TK at GD and the Forum there is also nice. But what I have seen here is a step above, large step. I just must be patient, take a little longer to save more. Maybe I should just leave her in the hospital tomorrow and not pay their ransom. Is that an option? Roy
  11. I have been reading this forum now for about 3 days, and I just had to join to say thanks. I have never laughed so much reading a ceramic forum, and I needed a good laugh. Let me start by saying you have to love a wife that wants to mow the yard, while I recover from shoulder surgery (thats takes a long time you know). But... two Saturdays ago she came in and said "I really don't want to tell you what I just did." I immediately thought she had broke our new John Deere, boy was I wrong. "I broke the Grill Dome", she said. Shocked silence. Yes my Dome had been reduced to ceramic slag. I had left the side table up and she turned the corner and caught the table and over it went, beyond repair. Oh well, things happen. Started research online to see how much I would need to save up this time, and found this place. WOW! Such torture, can I wait long enough to get one of these? After 5 years on my Dome MR. Weber just isn't cutting it. And how do I convince the wife, she complained about $500+ for The Dome. Though she never complained about what came off of it. She is right when she says "You have hardwood taste on a particle board budget" Again thanks have enjoyed being here. Roy
