I light the coals in the middle and put the double drip pan on the lower grate. You gotta slice the chicken when it gets brown and then let it sit in the pan to finish. I have pretty detailed instructions on this on the chicken thread if you head over there. the tray goes in the back where the lid closes. But try the drip pan or something between the tray and the fire. Never been a problem for me with that method

Actually passed out. Took the kids to sea world, drank a beer at the park. Let the girls go swimming and in the hot tub when we got home for first time this season, drank another beer. Then, drank a glass of wine that was left from night before while cooking. Then drank nice bottle with dinner. Passed out the nice part about this is I would have never bought an expensive piece of meat like that before but because of this group on the forum and my KK I now have total confidence to nail food like that. Thank you @MacKenzie @tony b @tekobo @jonj @Tyrus @Basher you guys taught me the ropes

Been traveling a lot and the wife has been holding it down so treated her today to a facial, nail & massage session followed by a nice home cooked meal A5 wagyu block cut searedon all sides with sea salt sweet corn on the cob was supposed to make a sliced potato medallion cake thing tfat I saw Frances Mallmean do but for whatever reason my first attempt at using a mandolin resulted in something more akin to hash browns. But I tossed it in Irish butter, truffle salt, olive oil, thyme & rosemary and put it on the griddle fir about an hour and drizzled parmesan cheese on top each time I flipped it. I call it a potato cake it was yummy. Hard to fuck up potatoes with those ingredients served with a 2012 Grgich Hills cab. Spectacular meal. Nailed the wagyu beef. My wife likes it well done but it’s f I serve her some medium wagyu crusted on outside she loves and it and she said it was my best ever. I’ll take it

Simple meal. Filet mignon with Montreal steak seasoning, reverse seared on cast iron with. Butter & thyme. Roasted baby potatoes with olive oil, truffle salt, garlic powder and rosemary. Seasons first sweet corn on the cob

A very good friend of mine died last September, very tragically, on my birthday none the less. He was a big marvel and Avengers fan and we had a long conversation about the Avengers campus at California Adventures and the shawarma cart & Infinity Stone hand /drink holder they sold there. Since he didn’t have kids I promised to bring him home the shirt and drink holder. Unfortunately he didn’t make it to accept it but I went to Disneyland l/CA Adventures with my family last week and I bought the shirt & cup holder as promised. Made the chicken shawarma meal tonight that he would’ve been here for. Some meals mean more than others and tonight was a special one…..

Roast chicken - salt & pepper with a bit of garlic powder & rosemary rub. Olive oil binder carrots, sweet onion & celery with salt & pepper garlic mashed potatoes with sour cream, Parmesan, rosemary & butter. Finished under broiler

Been awhile since I did a proper cook so tonight I picked up a couple of filet mignons, rubbed with sea salt & black pepper. Reversed seared in a cast iron pan with Irish butter, rosemary & thyme sprigs grilled some asparagus in the pan while the meat rested roasted baby potatoes with olive oil, truffle salt, rosemary & thyme finished with shredded Parmesan cheese just like riding a bike. Love this meal as it’s so easy in the KK and so much better than going to a steakhouse grilled a bunch of chicken breast after that I’ll use for Ceasar salad/chicken pitas and then chicken bowls with guacamole, corn, black beans & quinoa

@tekobo I believe that color was only on the rotisserie. My last few cooks with chicken I have not done rotisserie but that is likely coming soon. I got an itch for Peruvian chicken and I’m finally home for 3 weeks after traveling 8 straight weeks

I used a pot, boiling water, and mixer my grandma gave me when I was 18 when she taught me how make mashed potatoes. Normally I use sour cream but didn’t have any this time so it was just 1/2 a stick of butter plus 2% milk, garlic, salt, pepper and rosemary had to leave the family with some food before I took off to Hawaii for the week for work

After a long week of work (I did denver>Austin>Dallas (black ice)>Denver (blizzard)>Denver this week). my boss told me to take my wife out to dinner. In lieu of that I picked up a wagyu Picahna cut. Cooked it over the grill for a bit then finished in cast iron pan Roasted some potatoes with truffle salt , garlic, rosemary, thyme and olive oil. grilled the asparagus in the cast iron pan with wagyu juices while meat was resting
