I used to make my own Thai curry pastes but haven’t made it in at least 4 years so I decided to make my red & green curry pastes on Sunday. I go to the Thai market and get all the stuff and every time I go there the lady says “oh is this for your wife?” And I tell her “no it’s for me”. This time she responded by saying “wow you make very traditional curry paste, most foreigners don’t know to use shrimp paste”. I took it as a compliment tonight I used the red curry paste to make red curry with flank steak, red, yellow & orange bell peppers, sweet onion, oyster mushroom, mango, pineapple, Thai basil, lime zest & fish sauce. Served over jasmine rice. Pretty tasty and my jar of curry paste will last 3 months+ so super easy to make all kinds of currys quickly once the paste is made

@tekobowhen you take your trip here and to Mexico I’ll stuff you full of tuna. The bluefin is $16/lb which is incredible at a sushi restaurant you’ll pay $16 for two pieces of nigiri. It’s one of my favorite parts of living in San Diego having access to super high quality seafood that’s fairly inexpensive. I buy directly from the fisherman so it’s usually 24-48 hours out of being in the sea

@Basher you’re not going to believe it but we are actually about to do our kitchen as well. Not as major a renovation job as yours but it will be a complete facelift/makeover. Work projected to take two weeks, starting Nov 1. I seem to be following your lead on backyard remodel and now kitchen so I wonder if a Santa Maria grill will be showing up on my patio sometime soon…..

@C6Billid be interested in seeing what kind of chicken salads you make. I usually buy the value pack at whole food where you get 6-8 breast for $17-$22 and I cook them on Sunday night after I do a big KK cook. I usually do one of three things with them 1. Summer strawberry chicken salad with candied walnuts, strawberries, arugula, Parmesan cheese & raspberry vinaigrette 2. vegetable salad with carrots, cucumbers, bell peppers, avocados, chicken, spring mix, Parmesan cheese & raspberry vinaigrette 3. grilled chicken quesadillas with homemade flour tortillas, oregano, garlic powder shredded cheese and sliced avocado on top I try to eat somewhat healthy when I can but I struggle for healthy chicken salad ideas and usually end up doing the same thing over abs over. I’ve posted all 3 of those dishes before but stopped because I cook them so much and they are so “boring” that I didn’t want to piss off @tony b or @MacKenziewith my pedestrian chicken breast dishes every week 😀

Letting my KK take a breather this weekend and I’m making a few different dishes next few days that I’d like to share tonight is seared scallops served with a sweet corn, red onion, orange & yellow bell pepper, applewood smoked bacon, heavy cream and chive sauce/succotash

My local butcher started selling these pre-formed Wagyu brisket cheeseburgers. I bought some a few weeks ago for a little party my wife had and everyone was raving about them. I was too busy to take pics that time but tonight I picked up a few for my family put a little Montreal steak seasoning on the patties, grilled with some mesquite wood, brioche bun, romaine lettuce, tomato. Pretty good burger frozen sweet potato crust cut fries & ceased salad

@tony b will do. I picked up 6 bags of total oak at home depot about two months ago when my coffee charcoal ran out and I was in HD picking up liquid chlorine, so I’m still working through that but my next purchase will be JD. you’ve never led me astray with prior recommendations

I had a pallet of coffee wood and coco char that carried me through last year. I used the coffee most of the time and the coco char for special cooks. There is nothing better than coco char in terns of smell, duration and even burning. I’m out of coffee wood and have gone back to cheap Royal oak. I use that for everyday grilling but still have a few boxes of coco char that I’m saving for special cooks, I love the coco char

Nice to see you back @tony b good looking meal I cooked the “other” pork tenderloin tonight, marinated in balsamic, paprika, salt, pepper, garlic sweet corn and yesterday’s potatoes

Pork tenderloin marinated with olive oil, rosemary, sea salt, black pepper, paprika and brown sugar. Reverse seared and finished in the cast iron pan over the coals. smoked with apple wood. Served with a port red wine & mushroom reduction sauce grilled carrots smoked with apple wood roasted potatoes with olive oil, truffle salt, black pepper, rosemary & thyme my girls loved the pork and the sauce and crushed their meal. They are 4 & 6. Made me happy

@Syzygies pizza with no drip pan. Cooked at 500 same method as always same results i thought that I used to do pizza with no drip pan as my drip pan sat on the side of my house for months last year but I couldn’t quite remember since I usually make pizzas on Friday’s and I’m usually enjoying some beers. Sometime this year the drip pan came back to this side of the house and I stated using it again for pizza. Tonight after remembering your post I went no drip pan using my tried and try method and it was perfect

Sorry to hear that Dennis. I think you know I work in roofing and solar manufacturing we’ve been seeing crazy material price increases for raw materials, electrical breakers, shipping costs, delays in the port all the stuff you’re talking about. This week I even contacted by green tea supplier who gets his product from China and I’ve been using from him since 2007. He’s out of stock and his product is stuck in port of Oakland for a month and he told me he has to raise prices when it lands….it’s everywhere -
