  1. Re: Rain a factor? I am no expert but I doubt you need to be concerned about rain. It is recommened however that your first few cooks be "low and slow" as you would do for ribs or butts. The only bubbling that I noticed was on the top hat and only recently at that after doing a long hot cook and that was only around one tile. T Rex
  2. Hey Paswesley, I think pretty much every Komodo owner on this site knows exactly what you are going through........ The wait and anticipation is a killer! I came within a few hours of buying a POSK myself......... Mrs. T Rex and I had decided to make the purchase in the morning, I went to bed and she continued doing research for a couple of hours. In the morning she told me that she thought that we had a problem with the POSK given the feedback she found on the Web. However, she also told me about an real nice unit she found while doing research............. We contacted Dennis and bought a KK the next day. Too close for comfort.......... T Rex

  4. Well, I hadn't had beef ribs for a little while so I went ahead and did a small rack........ I reduced the BBQ sauce a little more than I wanted and cooked the ribs a bit more than I wanted but man was it good. Mrs. T Rex made some Yorkshire from the drippings, albeit in the oven this time. Here are a couple of pics... Sauce The ribs before basting (rub only) Ribs ready for the table Yorkshire puddings The plate Yorkshire may seem a little bizarre with ribs however I didn't want to wast the drippings and we had some gravy to thaw from a recent roast........ Fresh baby smashed potatoes and fresh Peaches and Cream corn shaved off the cob, infused with a ton of butter and fresh cracked corn. Overall a good healthy dinner.......... T Rex
  5. Oh that Guppy feeling.......... you can take big breaths but there is no substance to them...... Disorientation is another huge concern and even more dangerous with the elderly. T Rex

  7. Hey Dennis, I hope you have a great trip. Some pictures when you get back would be nice....... I have done 14,000' before and you might get that "guppy" feeling, the air will be quite thin if you are used to living at sea level. Keep a close watch on your mom. T Rex

  10. Never recieved a clip for my thermometer but I don't have a problem with it being loose as I spin it around to make it easier to monitor from the family room........... T Rex

  12. A friend of our had to remove a Walnut tree from their yard so I scooped up a bunch for smoking......... Now the question is, has anyone ever used Walnut to smoke with? T Rex
  13. Whoops........ I screwed up............ What I meant is that the KK was at 270F, not the Prime rib.............. but I figure that you have all figured that out............ T Rex
  14. I was aiming for 235F but ended up with 270F if memory serves me right..... I put it in at 12.30 and took it out at 4:30 .....I like my Prime rib at 128F on the table and because of the attempt to darken the outside, I over cooked it a little bit, for my tastes.......... T Rex

  16. I just can't get anything past you guys......... As FM noted, only used for raw product now.......... and Mrs. T has backed off a bit! T Rex ps I can't figure out why the Yorkshire turned out the way it did. It sure was tasty but funny looking. The first Yorkshire pic is what went into the KK and second picture is the finished product....... go figure.
  17. Conodo12.........x2 I did my first Prime rib roast yesterday, you will not be disappointed with your purchase! Congrats and hopefully pictures to follow! T Rex
  18. Well, I did my first attempt at a Prime Rib on the KK. The roast was around 5 lbs. and I let it come to room temperature before putting it in. I rubbed it well with a standard rub, smeared it in grainey mustard and poured the garlic to her as well as a lot of fresh cracked black pepper. I did get a little bit over zealous with the lump and as a consequence, my temperature ended up being some thing like 270F. Once I hit 128F I took the roast off and cranked the KK up to 500F/550F and put the roast back in for 10 minutes to darken the outside. Mrs. T made a Yorkshire and we cooked in on the KK as well. The Prime Rib I would of preferred it slightly more rare however, we still enjoyed it! A very nice way to do a roast. T Rex
  19. I keep a Stor-dry unit in the boat all winter and never a problem. These are little units that run on 75 watts and basically just dry out the air. I would think it would work great in a KK. Keeps my cuddy and cabin dry all winter, never any mold. T Rex

  21. Well, I have my mother coming over for dinner tomorrow and I decided to do a Prime rib roast, about 5 lbs. I checked the site and seem to come up with different cooking temps and time....... I am hoping to do it around 250F to 275F and was wondering: 1. Direct or indirect? I would like to catch some juice for Yorkshire pudding 2. How long in the KK more or less so I know when to put it in? Thanks, T Rex

  23. Well, the first couple of cooks were imaginary....... Salmon once and halibut another time.......... I was planning a cook for this weekend however I believe Mrs. T is in a horse show........ 4 hours on the chuck.... I didn't take any more fish pics as it was raining like crazy the second day. Overall we got into 3 hali, 7 salmon and a bunch of bottom fish.... T Rex
