  1. Re: Sweet Flavor.. Did you include any smoking wood or did you go straight CoCo? I'm currently using the CoCo with various smoking woods to see if I can differentiate between them. I have to admit, when I use hardwood charcoal with anything but mesquite or hickory, I can't tell much difference. Perhaps my pallet is simply trashed from the abuses of my college years, principally sampling my way through every bourbon and blended whiskey available. I just ordered some mahogany smoking wood to try and look forward to being able to try the coffee wood that Dennis may make available.

Also, thanks for the year-long gift that is this Forum. I can't tell you how often I search and find great advice, and when I need more info you members are there to help out. A sincere and heart-felt "Thank You". Finally, thanks to the "SF pallet-share" crew, especially Tony for taking delivery and Peter for sharing some of his mesquite reserve (still waiting for just the right use). I used the CoCo today to smoke my first batch of cheese (post w/ photos to be uploaded later) ... thanks David (aka Camel City) for your advice.

I suspect by now that you've sampled the cheese after it mellowed a while next to your favorite beer! Any chance you could provide an update on your results? I'm definitely intrigued to give this a try and would be interested to hear your thoughts on your batch and any changes you might make for next time. Thanks in advance!
  4. Re: KK CoCo Char Review is posted.... I am about to fire up my first batch of the new extruded and this is the first I've heard that it doesn't snuff-and-save as well as lump. Is this a common experience, and I'd be curious to understand why this happens. Any ideas?

  6. Re: Damn you, Dennis.... Wow! Your family is very committed to being available via phone and text no matter what they're doing! Personally, I'm doing just a touch of work that comes with a lovely wife who got the order wrong on the following two activities: backing out of the garage -and- opening the garage door. Fortunately, she recognized this before completing the first activity. Honestly, she would have to do many more such things to square the ledger with my own....

The photos helped because I would not have thought such a small amount of fuel would have given you the 6+ hours of cook time with plenty of fuel remaining. Pretty impressive! Congrats, Dennis! Has anyone tried lighting the ECC with the flame-throwing weed burner yet?

  9. Re: BBQGuru New Product According to the Stoker website the WiFi capable version has been delayed, now projected January 2012. I've been holding out for the WiFi version ... it's a race now between the WiFi-capable Stoker and the new sexy plug that Dennis previewed recently and is in production. I hope they tie!

Re: New Guru plug design finalized and in production It just snaps into the Guru inducer tube which is built into your lower fan faceplate (since 6/09) For earlier KKs it fits into the inducer tube that you received from Guru and tapped into your KK faceplate. As you may have discovered the silicone plug from Guru is not really designed for high temps.. Excellent! I'm about to order a Stoker and needed a post-cook plug, so a few weeks ago I ordered a silicone plug from Guru. I'll use it until you're ready to ship these gems (assuming it doesn't melt/burn away!).

I also just rub, cook at 200-220 for 4-5 hours with a smoke-pot that I put on the coals when I add the ribs, paint with whatever sauce I've made or bought, and then cook for another 20 minutes to set the sauce. I've never gone the foil route either. With foil, would you wait to add the smoke-pot until the baby backs come out of the foil? Do you get a get a good smoke on the ribs when using foil?

Does anyone know if this is similar to Buffalo Milke? http://www.buffalomilke.com/ I am not a shill for that stuff but it really is great on my cars, very easy to use and sounds similar to the product you list. Don't know how the costs compare since I had not discovered the Slick Mist stuff.

Re: Low and Slow With Lump Question For low-and-slow I light my lump as Dennis recommended to me when I purchased: fully pack the basket, filling in the big gaps with medium chunks and the small gaps with small pieces. Then I light a tennis ball size in the middle (I use a weed burner flame-thrower for about 90 seconds ... love that thing!), blow the hot spot with a cheap hair dryer for about a minute, and close the KK with the vent and cap wide open. If I'm in a hurry I pull the vent (or both vents) open rather than just spin the dial to wide-open ... gotta' watch the temp though because it can heat up fast. I begin to close the air down as the temp gets to within about 25[sup:nk9i305g]o[/sup:nk9i305g] of my goal temp. I use a smoke pot with my wood of choice but I have to admit that I have a hard time distinguishing between various woods (except mesquite, which dominates). Perhaps my smoke palate is unrefined but I suspect the issue is the lump smoke (oak) overwhelms the smoke pot wood. I'm looking forward to using the extruded coconut that Dennis is teasing us with at the moment ! You may want to check into that as a potential source of fuel if your issue is sourcing fuel.
