Trying THAT bird tomorrow, food porn to come. This will be a test for November's cook. According to Max the brining is optional...hmm, I've been brining for years :smt017

I have made a mad max chicken, upright on a beer can type setup. Yup, uh huh!! I recommend it.

being a newbie, you never know how far you can push 'attempts' at humor.

So SHOULD have I rolled up that butt? It did seem to have a flat-er end to it. Although it would have been rather FAT had I tried.

Buy bone in instead! Not a good thing when you gotta roll up your butt.

So ask for a bone-in Boston Butt. I took the advice of some of the other guys up here and went to WallyWorld for the butt. Still got one 'boneless' in the freezer. Can you find bone-in at Wally's?

You gotta hit the warehouse strores...then you can get the bone-in cryovac butts. They all have them, I know BJs are unmolested (not enhanced with up to a 12% solution...) and I think Sams may be natural as well.

99.9% of the stuff in the case at Wallys is "enhanced".

Just picked up a 2 pack of bone in butts (1.29/lb)

a cryovac of 3 racks baby back ribs (3.19/lb)

and a couple whole chickens (.79/lb) Minimally processed...try finding that in a grocery store for less than twice the price

...I hate injected meats, I would rather brine my own flavors into them. :D
