Thai Cooking!

Been playing around trying to learn how to cook Thai food lately and found these web sites. Please, if anyone has any great recipes, tips or advice on Thai cooking I would love to see them! Ok, with the exception of insect or rodent recipes. :?

That is funny, he just mentioned that to me the other day and said he may post it when he gets a chance. I been beating him up lately trying to get him to post some of his wife's recipes.

I've taken four weeklong intensive classes with Kasma loha-Unchit in Oakland, CA (people travel to take these classes) and I've taken a month-long food tour of Thailand with her. Her web site, and cooking, is the authentic real deal. Plenty of online recipes, ingredient recs (note my photo credits in many places):

Rice hulls are also great for smoking chicken and fish..

Hey Dennis, what is this about doing chicken the Thai way, under a bucket........ sounds interesting.

The famous make a huge pile of rice straw over a tim bucket with the chicken inside and light it way.. burns VERY hot and 15 or so minutes later you have a very crispy bird inside.. I think they pre boil them a little bit..

Actually has a great smoky flavor.. Rice hulls are also great for smoking chicken and fish..

I got the scoop from Sai..

So Sai told me exactly how it's done.. First the chicken is stuffed with herbs and tied up..

Then it's set on a beer can half full of beer.

Chicken is set on the ground and a metal bucket placed over it.

Rice straw is placed around it and lit..

Straw is added during the cook which lasts 20-30 minutes..

It is not pre cooked..

There you go..

Right from the (Thai) horses mouth..

If she reads that I'm done..
