John A Posted October 4, 2016 Report Share Posted October 4, 2016 (edited) I'm going to cook a 15 pound packer brisket and was wondering which charcoal to use. I'm going to use a smoke pot with apple wood chips. It's going to be a long cook and I wanted to be sure I choose the right charcoal. Any opinions? The posts that I've read suggest that the coffee charcoal is more for shorter cooks. Also how big do I make the charcoal chunks for the coffee or coco charcoal ? Steve M Posted October 4, 2016 Report Share Posted October 4, 2016 I would use the coco char if you have it. I had my kk going this weekend for nearly 24 hours and didn't use half the basket. You can get your smoke flavors from the smoke pot. As far as the size of the chunks, I knock 2 of them together and they generally will break into 3 sections which seems about right. You will have more imparted light smoke/wood essence to the bird using CoffeeChar than using CocoChar but I like the Coffee Charcoal's flavor impart.
