Pequod
Was planning to cold smoke some cheese tomorrow, but the forecast high is 26 degrees. I'm thinking the smoke blown into my KK will be enough to keep the freeze off my cheese, so full speed ahead. What say you of colder climes? @tony b? @MacKenzie? Cold smoking cheese in freezing temps okay or no?
MacKenzie
There is some heat from the smoke I think you will be fine. The other day when I did the nuts it was harder than I was expecting to get the smoker going because the smoker was so cold and the fire in so small. Pequod
That's what I was thinking. I'll use my Smoke to monitor the interior temp just to be safe.
tony b
To be honest, when i did my last cold smoke (nuts) I waited for the temps to clear freezing (32F/0C). More for me than the smoker actually! You might fair better with it being cold; the smoke will condense on the cheese faster and it will be ready sooner - my best guess? I punted on today for the same reason. Not for the cheese. For ME! Brrrrrr! Born and raised in Chicago, but can't take it anymore!
