Shuley Posted October 18, 2017 Report Posted October 18, 2017 If I wanted to do two full paper briskets on my 23, what would the ideal configuration of those briskets be?
5698k Posted October 18, 2017 Report Posted October 18, 2017 Why not use multi levels? Edit: I guess that’s what you’re asking. Ok, I’m a bonehead. The main and lower grates are probably the best way to go, unless one of them is smaller and would fit on the reversible grill above the main. What size briskets are you cooking? DennisLinkletter Posted October 18, 2017 Report Posted October 18, 2017 I'd go main and upper with drip pan and tin foil shiny side up to create the indirect area..

Counter-intuitive to this engineer (radiant heat transfer), but this came from the Reynolds folks, not some internet babble.
Shuley Posted October 24, 2017 Author Report Posted October 24, 2017 I ended up following dennis' advice but for got to take pictures. They turned out well though! 1
