  1. I got lucky with my new KK in San Diego, I neglected to consider a tight squeeze between a retaining wall and my AC unit but the KK legs slid though with no problem. When I was in Massachusetts I had plenty of clearance, but lots of mushy grass between the driveway and the final resting spot. Luckily, I had a plan that worked flawlessly!

  2. Yesterday anpther batch of Stuffies went on the KK, talk about a tight fit,,,36 in all. Then while the coals were still pumping out the heat a bone in Turkey breast marinated in a herb, Rhine wine, olive oil and mustard sauce slid onto the grate. I hope I can remember the blend, it had an aroma of heaven....fresh herbs are the best, and it popped with the addition of the Dijon, I wqs surpised after only a 5 hr marinate you could taste the herbs, I did poke the breast with a knife for penetration and added an oddity to the mix that worked out well...Apple Cider Vinegar. Next time an overnight soak will hopefully produce a more intense flavor

  3. Use less fuel. Just a few coals will do for a cold smoke of salmon. Plan B - heat soak the KK at the desired temperature for an hour, kill the fire, then put the salmon on with the smoker going.

  4. On of our IA breweries is named "No Coast"!! LOL I wish that I had a good seafood market here. Some restaurants get decent stuff. We do have a truck that comes up from Galveston every few weeks in the nicer months that has really good, fresh shrimp, crab meat and whole red snapper. They also have oysters and crawfish, but never live/in the shell - too bulky.

  5. All these meals you are all cooking look so amazing... I'm out of action for 1-2 months at least as I broke my leg almost 2 weeks ago, and as the only KK user/ cook in our house I'm going to have to live vicariously through you guys until October or so. So keep the great photos coming!

  6. dennis will custom make anything you ask for as long as it's within reason and you are willing to pay for it. like i asked for a zippered cover with grommets on the bottom and a duck hanger for the 19. none of it is standard inventory but he made them anyway. what a legend.
