How big of an opening do you have and perhaps some photos of the space. You have lots of options that we can hopefully walk you through.

Well they were awesome. Super tender, bite clean off the bone but not sloppy and the rib squirted when I bit into one. Smoke ring was off the charts today
-
Smoke pot yes with 3 peach chunks and some peach pellets. Cooked at 250 I am using EAT BBQ zero to hero and touched them with meat church honey hog. I have spritzed with apple juice/cider vinegar mist a few times. I'm not a fan of bark on ribs. Anyways going to sauce one with blues hog shortly. I am about 30 min away from saucing
-
Cooking them at 250 for about 4 to 4.5 hours. Just opened to spritz and loving what I am seeing here

Have some extra time today so thought I would put two racks on for dinner. Kids have hockey tonight so I need them done by 4 ish.

Typical Dennis..... You create fixes to problems before anyone ever thought that there could be a problem.

that looks really amazing. I bet the cold smoke added a ton of great flavour

23" Ultimate or 32" Big Bad -- That is the question!
bosco replied to John Wheeler's topic in KK 411
Well.... I have both and feel like I can add some input. The 23 is my daily driver. I love it quite honestly. My 32 however, this is my dedicated smoker and I use it when I am grilling lots of food. Heat up and fuel consumption is comapatable. I can get the 23 to 350 in about 10-15 min and the 32 15-20 min. Fuel consumption.. you add more to the 32 but it lasts. If you are looking st larger cuts of meat cooks and only one grill, my vote is for the 32. -
I was wondering about the carne crosta. So you guys would recommend it? I too had the habrsnero death dust on wings. Less is definitely more

I have tried a few Oakridge rubs and I will say I don't fancy many of them... however, their black ops brisket rubs is lights out. I mean I t is oiterally in my top 5 for must have rubs. Great on all beef low and slow. John Henry's, now that is another story. Huge fan of thier products. Rubs have a high sugar so will harden. I have a small coffee grinder that makes easy work with them if that happens. Summertime peach is my go to for sweet ribs. Cilantro and lime is also killer. I have a bunch more that I can recommend if you want

The oxy clean did a better job at cutting the grease and the grate was more stainless but still has a black hue to it. The under side wasn't even phased by the oxy. I will soak this grate once I get more PBW in the mail. The thing about the oxy is that it leaves a slippery residue on the grates that I scrubbed more to get off. Not sure that I will use it again. The thing about the PBW is that I couldn't tell that it was in the water (no suds) but wishin the first hour the water started to go brown and eventually black. It literally lifted the black build up right of the stainless after an overnight soak. The dawn allowed me to wipe away the grease but it didn't tackle the caked on stuff at all. I am so very pleased with the PBW. Great product and worth the extra cash. I will do this quarterly from now on just to keep things fresh.

When carne Asada cooks I know the mojo took because of that gorgeous pink colour that comes out. I just finished the last three tacos for a late lunch before I go in for nights. So deliscious I can hardly wait to make it again
-
Busy night tonight with football and both boys on the ice. Wanted to make tacos tonight so marinated them late last night. Used my newly cleaned grill and fired up my 23" KK. I know when the flank steak took thearimade right because the meat goes a beautiful shade of pink when cooked on the grill. Mixed up a batch of bosco's pico and all ready for tonight's dinner. Good timing as well as it looks like we are in for some serious rain. I don't think there is a meal that I would rather eat than my carne Asada.

I got almost 6 hours but the water just wasn't turning like it did with the PBW. The PBW starts working quickly and less is more. From what I read, I need a ton of oxy for similar results. The other issue is the grills needed extra washing they were coated in a slippery film

Bruce amazon actually has a better price on it https://www.amazon.com/gp/aw/d/B0064O7XRY/ref=mp_s_a_1_1?ie=UTF8&qid=1478622996&sr=8-1&pi=SY200_QL40&keywords=pbw+8+lb&dpPl=1&dpID=41zXHoBe-jL&ref=plSrch

Im going to order here. This is the cheapest I have found it http://www.homebrewohio.com/pd-pbw-8-lb.cfm

We need a meet up again soon. @Stile88 you are in for the next meet up with the KK crew. @Jon B. I scrubbed them after but they still didn't get to the PBW level. @ckreef I am soaking the darker ones right now in oxyclean free as we speak. I will let you know what happens. I am hoping this is a winner but think that PBW will prevail victorious.
-
@MacKenzie did you ever source PBW? I just found a store online from Ohio that has it relatively cheap. I may order the 8lb jug for 54.99 US. that works out to be about 9.50 a lb CAD opposed to the 18 I paid here yesterday. They also have a 50 lb for 199. Just not sure that I need that much lol @HalfSmoke I see what you did there
-
But wait ..... there's more. Operators are standing by. I got up early to rinse them and noticed that when I sprayed the PBW grates the black stuff just peeled off. No scrubbing nothing. The Dawn is clean but darker. For some reason the grates are not clear of the black gunk like with the PBW. Check out a side by side comparison of the two. I guess I take back what I said earlier. I was a bit premature in my conclusions. see for yourself and determine how you would prefer your grates to look after cleaning.
-
Yeah buddy that dawn is something else. The water is clear and the grates wipe away clean. No chemicals just soap. Hot water and soap is going to be my go to. Indo have the oxy clean now so I may mix like others said until it is gone. That is great news for me as it will be a fraction of the cost for cleaning. I now endorse JonBs recommendation whole heartedly

7 hours in and I just lifted a grate out from each. The water with the dawn is clean and the PBW is black the dawn grate wipes clean with zero effort the PBW I have to scrub clean and it still leaves black residue in spots. I have a winner!
