  1. Everyone is going spastic. Lucky I still have a job but that's not guaranteed. The way things are heading .I start work before the shops open .and when I'm finished the shelves are bear .Who is buying all this stuff . My butcher has started rationing .he is a top bloke he knows there is heaps of meat he can get .to keep us all going

    A mate dropped into the butcher the other day and the guy in front of him had 70kg of meat- that’s over 150lb...... panicking...... knucklehead!
    Harvey Norman are running out of freezers!.... insane!

  2. And you probably won't see again .except from me .lol . The Panko bought a subtle crunch to the ribs .coating pork chops in panko style .that was my reasoning .something different. But that's me .

    So tell us what the panko brought to the table? Never seen anyone try this before, so I'm naturally curious.

  3. Na . I first discovered this method on my KJ classic whilst I was mucking around .it takes a while (Funny what does W.A stand for wait awhile.) For the bloody thing to heat soak . So I just fill my basket light it with three samba natural fire lighters from Bunnings. Let them catch hold and add my grates.shut the lid with all vents open ,and ark it up to 400. And this stage my meat has been prepped I have some alfoil ready as a deflector .Open lid take out grates add wood add lower grate add foil add top grate then the meat close lid ,shut top vent to 1/4 shut down right moon side and adjust the left to a quarter .stops at 250 for me every time. I do act quick during the grate process .lol

    So Aussie my KK has vents open on 3mm hole plus 3mm on the moon and the top between 1/8 and 1/4 open to hold this temperature. Is yours about the same?
    Do you wrap your ribs at the end?

  4. 250 on the dial mate .3 hours and they are done can take another half hour .like this cook did with adding the panko. Without drying them out . Going straight of course.

    Looks good.... again Aussie.
    R u holding the KK around 120c for these ribs? And how long do you allow?

    Scored another meaty rack of ribs .was out of mayo so just used the burger sauce for a bind same diff. 7a5c39a82069bd34cab1caa1d4962778.jpg.     Decided to slow cook a lamb shoulder on Sunday
    Used some balsamic to help the rub stick and left in the cold room overnight.
    Woke up to a beautiful Sunday morning- despite the building site.

    Started the fire at 10:30am.
    Lamb shoulder in at 11:15am.

    Smoked for 4 hours amongst leftovers from the demolished shed.

    Then wrapped it over cabbage with some sweet mint sauce.

Your not the lone ranger .been happening here in Perth for a while now and we only have 14 confirmed cases and all of them came back in .Our Government just passed a law demanding anyone entering the country to self isolate for 14 days should have done it from the start we are an island NZ kicked it off. .people are going spastic over rice and baked beans .bugger eating that in lockdown. My vertical freezer is chockers full of meaty goodness . Plus I have access to this store .https://www.campbells.com.au/. Which is pretty stocked. I agree during a lock down a light refreshment will be required .maybe will all should head to tony b's place lol. And maybe I could send you some dunny papper in my next care package.

  8. Bloody oath you could .nothing wrong with the odd gas cook . We have free gas bbqs scattered around the place . Here in Perth .near the river and the Beach . Great for snags and quick steaks

    We're looking forward to the new adventures. Yes a reasonable grill but I think I choose wisely (both grill and trailer). I'm not scared of propane I can make any grill sing (with enough practice).
