  1. Beautiful to me Mackenzie. I’m going to attempt my first loaf of bread ever hopefully this week. Going for a country loaf by following the Tartine book. Have my starter on day three right now. I didn’t realize the Tartine bakery is only twenty minutes from where I live. Also the Pizza Bible author is about thirty minutes from me. I’ve eaten slices from his restaurant often. 2. I think that’s true with all coffees. I’ve had discussions on this with several people. Sent from my iPhone using Tapatalk
  3. I hear you. Last comment on this because I feel taxes can fall under politics and this is a cooking forum. I live in Cal and we lost our deduction(like NY)of writing off our state taxes. I’m paying federal tax on money that I never received because the state took it as taxes. It’s so wrong. I’ll just have to wait on my espresso machine. It’s no joke as what I have to pay is twice as much as my worst case scenario. Sent from my iPhone using Tapatalk
  4. Nice equipment! That rabbit hole can be dangerous but also a hell of a lot of fun. Sent from my iPhone using Tapatalk
  5. Argh...just saw my tax situation under the new tax laws. I’ll be selling my grill instead of buying an espresso machine. [emoji51][emoji23]. Sent from my iPhone using Tapatalk
  6. That profitec 300 does look sweet. Let me research that a bit. Sent from my iPhone using Tapatalk
  7. Pequod and Tekobo i got the book Tartine arriving any hour so I can start trying to bake some bread. If it’s not bbq, pizza, coffee, etc...it’ll be something else. Lol Sent from my iPhone using Tapatalk
  8. If you HAD to choose a machine with a hopper(where I’d add the beans each day) do you have a preference in the higher end models? Keeping simplicity in mind. Sent from my iPhone using Tapatalk
  9. Sent from my iPhone using Tapatalk I actually have three chemex carafes cause I start with two in the am and have a spare in case one breaks. Lol
  10. I was trying to post photos here today but I’m having issues. I use the chemex method every morning. I have the $200 Baratza Virtuoso grinder which testers said worked as well as the very expensive ones. Not sure if u believe that but it’s working well. I was looking to use the espresso as my late morning/afternoon pick up. Sent from my iPhone using Tapatalk
  11. Pequod, I hear what you’re saying but my reality my collide with my family’s reality. My wife loves pour over coffee but hates making it. I replaced a keurig which was garbage to me but served the purpose for my wife. We have a 1 and a 2 year old running us ragged. If I convince her to get one it’ll have to be something very user friendly for someone who doesn’t cook or care about the detail of brewing the best cup of coffee. I hope it doesn’t come across as my wife doesn’t care because she does. I have every toy I’ve ever wanted so I also think it’d be nice to get her something she may love too. 12. The hopper would hold some beans. I’m looking at a machine that grinds them just at brew time. Am I missing something? Sent from my iPhone using Tapatalk
  13. That’s nice! Although I think I want something with a bean hopper. I’m so confused. The breville oracle touch seems nice and might be easier for the wife to use. Sent from my iPhone using Tapatalk
  14. I was looking at one of the Breville models. Sounds like you’ve got a lot of experience on this topic. I will look at the names you provided. Thanks! Sent from my iPhone using Tapatalk
  15. Wow...I’m looking to get an espresso machine but I’m trying to cut down on my screen time. [emoji23]. I also have the wife saying no due to counter space. I told her she can put whatever she wants in her domain the laundry room [emoji51] Sent from my iPhone using Tapatalk
  16. I switched from lazarri lump to FOGO super premium. The difference is incredible. Very clean burning and hardly any ash after a cook. The only negative is it has a shorter burn time. I just ordered Tartine myself. Excited to bake bread for the first time. Sent from my iPhone using Tapatalk
  17. Looks good. What makes it different than hamburger? Sent from my iPhone using Tapatalk
  18. I’ve just finished my third cook with FOGO premium and I’m shocked at the amount of ash that isn’t there! Literally there is just a dust pan of ash after three full 1/2 baskets in my 32” It is head and shoulders way better than everything else I’ve tried. Sent from my iPhone using Tapatalk
  19. I was using Lazarri oak which has the depot fifteen minutes away but 1/2 the bag is dust. Disappointed as it was $9 for a 20# bag. Just tried out FOGO super premium and I really liked it. Sent from my iPhone using Tapatalk
  20. Beautiful! Sent from my iPhone using Tapatalk
  21. Ok...so that would explain how you avoid the problem of lump around the main flame getting hot and smoking as time goes by. Think I may try your method. Thanks for the info Sent from my iPhone using Tapatalk
  22. Syzygies-do you start every cook with a full basket of lump or do you just put in what you think you’ll need for each cook? Last question...I promise [emoji23] Sent from my iPhone using Tapatalk
  23. Ckreef I just had my first big grease dump by accident from a pork shoulder. That was some rancid smoke I had going for a while. Sent from my iPhone using Tapatalk
  24. If you light all the coals at once wouldn’t the temp go much higher than 450? Sent from my iPhone using Tapatalk
  25. I will try a different lump. The problem was nonexistent with the extruded coco charcoal but I can’t get that from Dennis. I think the problem is some lump is always catching fire during a longer cook in a whole basket so there’s the smoke from that. Sent from my iPhone using Tapatalk
