Beautiful to me Mackenzie. I’m going to attempt my first loaf of bread ever hopefully this week. Going for a country loaf by following the Tartine book. Have my starter on day three right now. I didn’t realize the Tartine bakery is only twenty minutes from where I live. Also the Pizza Bible author is about thirty minutes from me. I’ve eaten slices from his restaurant often. I hear you. Last comment on this because I feel taxes can fall under politics and this is a cooking forum. I live in Cal and we lost our deduction(like NY)of writing off our state taxes. I’m paying federal tax on money that I never received because the state took it as taxes. It’s so wrong. I’ll just have to wait on my espresso machine. I was trying to post photos here today but I’m having issues. I use the chemex method every morning. I have the $200 Baratza Virtuoso grinder which testers said worked as well as the very expensive ones. Not sure if u believe that but it’s working well. Pequod, I hear what you’re saying but my reality my collide with my family’s reality. My wife loves pour over coffee but hates making it. I replaced a keurig which was garbage to me but served the purpose for my wife. We have a 1 and a 2 year old running us ragged. If I convince her to get one it’ll have to be something very user friendly for someone who doesn’t cook or care about the detail of brewing the best cup of coffee. I hope it doesn’t come across as my wife doesn’t care because she does. I have every toy I’ve ever wanted so I also think it’d be nice to get her something she may love too. I switched from lazarri lump to FOGO super premium. The difference is incredible. Very clean burning and hardly any ash after a cook. The only negative is it has a shorter burn time. I just ordered Tartine myself. Excited to bake bread for the first time. Sent from my iPhone using Tapatalk

I’ve just finished my third cook with FOGO premium and I’m shocked at the amount of ash that isn’t there! Literally there is just a dust pan of ash after three full 1/2 baskets in my 32” It is head and shoulders way better than everything else I’ve tried. Sent from my iPhone using Tapatalk

I will try a different lump. The problem was nonexistent with the extruded coco charcoal but I can’t get that from Dennis. I think the problem is some lump is always catching fire during a longer cook in a whole basket so there’s the smoke from that. Sent from my iPhone using Tapatalk
