Re: Poll - Main and lower handle position/placement Hmmm, this was a suggestion I made a couple of years ago and sort of got "blown off". I was told use gloves, etc.... Thanks Naked Whiz! I took a heavy hammer and fixed my concern by hammering the handles on the main grate towards the centre. Pretty easy fix. SS -

If you are impressed with this unit and I should mention that I went through the same trance once mine was in place, wait until you experience the after market support you will get from Dennis! Prepare yourself for another trance............ ...........and we haven't even touched on the quality of the food the KOoker will do for you! I should mention relative to Andrew's request that I in fact got my KOoking directions from you when I did my turkey and after following your instructions to a T....................... it came out great! Our Canadian Thanksgiving is about a month earlier than in the USA, I did another one and it turned out very nice......... Andrew, I don't think it is possible to screw this one up, even if you tried. The KK is the most forgiving thing in our house, except for Mrs. T Rex of course........... T Rex

Re: Grilling/Smoking Lite Hey Larr, you might want to try what I do when I find that I have to push away from the table for awhile........ I don't change one single thing that I do except for one thing, I only eat half of what I used to. It may not be a sexy diet or something you can write a book about but it absolutely works and you can still have all the things you like. I have maintained my weight within 20 pounds for the past 32 years however after buying a KOoker earlier this year, I exceeded my 20 lb. limit. Well, I am back in the saddle and planning my next cook without any major sacrifice other than smaller portions. T Rex

Re: Roti Duck Hey Slu, I have now done a couple of ducks on the KOoker which have turned out very, very tasty......... I cook a duck the same way I would a "drunken chicken" whereby the duck is sitting on a beverage can filled with water and Five Spice. I bast the duck every half hour with a combination of Five Spice and Hoisin sauce which carmelizes very nicely. Sooooooooooo, 5-6 hours at 300F with basting every half hour. The skin is not crispy but neither is it tough and the duck is very moist. This is as close as you can get outside of going out and buying a BBQ duck....... Re: Home made beans Very simple to make and delicious JD..... 1 lb. of white beans soaked for 24 hours 1/2 lb. of smoked Pork Jowl diced up 1 medium onion diced up 1/2 cup of ketchup 1 tablespoon of dry mustard 1/2 cup of dark molasses 1/3 cup of brown sugar or equivalent Maple Syrup 1/2 to 1 teaspoon of Cayene (optional but tasty) Salt to taste (because the Smole Jowl will be salty I wait until the end to add any salt. Put everything in a bowl, water, beer or stock to the top of the beans and cook on the KK for about 6 hours at 300F T Rex
