Tacked a 1/2 sheet of 3/8" plywood to the edge of the pallet and rolled it off............... T Rex -

Hey Cruiz, I do exactly the same thing. My KK is on a little patio at the back of the house and I can see the temperature gauge from my Lazy Boy in the family room. I do the exact same thing with the temperature gauge however I was not familiar with what the pilots did...... works great! T Rex

One of the arguments Mrs. T and I used was that since these were so well built, we would leave it to our new Son in Law and our daughter........ right? Well, what will really happen is that once they get settled down (just got married in Walla Walla May 29th) they will buy their own and it will be a newer model than the one we have! (He is an MD and the daughter is an RN) Well, so much for that theory, we would of bought it regardless....... but I will be peed off if the young guns end up with a 32"........ T Rex

Re: RIBEYE Hey Susan, go for it........ Mrs. T Rex and I have done some that were around 18" long and they were fantastic... We sat around the fire pit, held the rib ends in each hand and started chomping from one end to the other, hilarious and tasty! T Rex

Well, after seeing FM's meatloaf the other day, I knew that I would have to try one as well. I threw everything but the kitchen sink at it: ground round, sausage meat, butter, salt/pepper, celery, stuffed green olives, shrimp sauce, 1 egg and panko crumbs......... the sauce was shrimp sauce, ketchup and brown sugar. Got the KK to around 300 direct and cooked for 2.5 hours. I am not unhappy with the results but will shorten the cooking time the next time around. Mrs. T Rex loved it served with fresh baby potato salad and peaces & cream corn........... Meatloaf on the KK Shortly before taking it off of the KK I let it rest for around 15 minutes Plate shot The only thing I would do different is a shorter cook time... T Rex

Mrs. T Rex had a couple friends from the stable over yesterday so I threw together some Beef and Pork Back ribs......... Warmed up the KK to 275F, put the ribs in for 3.5 hours, glazed with sauce for another 1 hour, let them rest for 30 minutes.............. you know the rest. I don't typically take plate shots if we have company..... sorry about that. They were outstanding! The ribs with rub and flakes of dehydrated onion and garlic Ribs moved to the KK Ribs after being in the KK for 3.5 hours (rub only) Glazed the ribs Finished product.......... I don't know what we did before we discovered the KK......... T Rex

Finally did my first rotisserie turkey yesterday. I heated the KK to around 350F over lump hardwood and started the turkey, indirect heat for around 3 hours then removed the heat deflecter and cooked it for aother hour. The bird was very moist and nicely smoked (I used Apple wood chunks). Here are a couple of pics.... The KK is warmed up and smoking lightly Joe from Onegrill was kind enough to exchange my motor to the 50lb. one Turkey in the KK and finally resting...... The only hiccup was that I could not get the rotisserie out of the KK once it was hot and must of expanded............... While I am at it, a couple of shots of another oddly shaped pizza. Mrs. T Rex made the dough and we used pulled pork, red onions, black olives, cheese and homemade BBQ sauce. The KK was not quite hot enough..... too much of a hurry! The finished product, we had an accident putting it on the stone...... T Rex

NIce job FM, I just finished filling up on a turkey that I did on the KK with a roti today and my stomach is growling when I look at your meat loaf....... Sure looks tasty! T Rex

Thanks Doc, warmed the KK to 325F indirect from 1.30pm till 4.30 pm then removed the heat shield and did direct at 350F ish until 5:30 when I took her out and let her rest...... I think it turned out great and so does Mrs. T...... I will post pictures tomorrow. T Rex

Hey Doc, I have been doing the same with corn on the cob and it is outstanding! I am going to try my first roti with an 11 lb. fresh organic turkey today, I will report back later if it turns out........ T Rex
