  1. Re: KOSHER SALT VS. SEA SALT The turkey came out great. It was not salty. The Bay Leaves gave it a distinct flavor. I pulled the Turkey at 162. I wanted to pull it at 155-159. The turkey was not dry, breast or dark meat. Everyone raved about the turkey. I have a picture of the turkey but I don't know how to post.

  3. I am cooking a turkey today. It is Spatchcocked and brined. I plan on cooking it indirect at 350 with some Maple chunks. Instead of using the Heat Deflector is there a difference if I use the Drip Pan ? Do they not do the same thing ? I hope I can get some answers soon as I am cooking this at 10am. Thanks.
  4. I have Spatchcocked my Turkey and it is now brining away. Since the turkey is Spatchcocked do I cook in Direct or indirect ? On one Forum I was advised Raised Direct at 400. Is that a bit too high ? I have to have the Turkey done by 1pm as we have to be at my In-Laws at 2pm. Thank you.
  5. Re: KOSHER SALT VS. SEA SALT The Recipe calls for 3/4 Cup of Sea Salt And 1 Cup Soy Sauce, along with the other ingredients. If I use Kosher Salt, can I get use 3/4 Cup of Kosher Salt ? Thanks.
  6. I am cooking a Turkey for a Hanukkah Party this Saturday. I am using the Turkey Brine Recipe from MGuerra. I will be adding bourbon as well. My question is, is there a difference between Kosher and Sea Salt ? Will using Kosher Salt do the same as Sea Salt ? I just hope the Turkey isn't salty. Thank you.

  8. Re: First KK in Perth, Australia Congrats on the new KK. You are in for a treat. As for your KJ, I would keep it if I were you. It's nice to have the extra cooking space if and when it's needed. Along with my KK I have a BGE XL. Enjoy the journey.

    Re: Pork Ribs Ribs can be cooked at 350-375. They will just take a shorter time to cook. On the Greeneggers Forum they are called "Turbo-cooked Ribs".

Was 72 hours too long ? What did you use for smoke if you smoked the Turkey ? Do you think adding Bourbon be too much or just add more flavor ? I want to try this soon. Thanks for telling how you turkey came out.

  21. I don't know if the KK related but this is really good. Ruth's Chris special sweet potato casserole Makes 12 servings Crust 1 cup brown sugar 1/3 cup flour 1 cup chopped nuts (pecans preferred) 1/3 stick butter, melted Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside. Sweet Potato Mixture 3 cups mashed sweet potatoes 1 cup sugar ½ teaspoon salt 1 teaspoon vanilla 2 eggs, well beaten 1/2 cup (1 stick) butter, melted Preheat oven to 350 degrees. Coat a medium-size casserole dish with nonstick spray. Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a large mixing bowl in the order listed. Beat thoroughly with a hand mixer to increase the fluffiness of the sweet potato mixture. Pour mixture into the baking dish. Bake for 30 minutes. (At this point, dish can be covered and refrigerated.) Sprinkle the surface of the sweet potato mixture evenly with the crust mixture and return to oven for 10 minutes. Allow to set at least 30 minutes before serving. The brown sugar and pecan crust should be slightly browned and crunchy. Happy Thanksgiving !

  23. Re: Would you buy a used BGE XL for $700 ? I would agree that the KK is top of the line in Kamados. I love mine and use it as my primary cooker. However, as I stated in a previous post on this topic, I felt at $700 for an XL BGE was a steal. There is nothing wrong with owning a BGE as in any other Kamado. Yes the KK is superiorly built compared to other Kamados but there is nothing wrong with owning a BGE yet alone to use as a second cooker. Besides, BGE does make besides the XL, a Large, a Medium, a Small, and a Mini. It's nice to have extra space when you need it and I have.
