  1. Re: Largest turkey for the roti Speaking of Mad Max, our Whizzy (The Naked Whiz) has posted the Mad Max stuff on his website for all the Thanksgiving gladiators. http://www.nakedwhiz.com/ceramic.htm
  2. Re: Saturday Night Bone-In The tenderloin will, of course, be fabulous. But it won't have the flavor of your bone in, or a good strip. But you're surely using the best possible method for it.
  3. Re: Largest turkey for the roti Wow! You're brave, Tex, to have one of your first cooks be a Holiday Showcook! Not to say that your magnificent cooker cannot handle it - sure it can. I can't answer your question, but I'll cheer for you! I did a turkey one year (no roti) and it turned out great. I recommend you brine the bird. Makes all the difference in the world. Do a search on this board or out in the world for Mad Max (or Maxx - not sure). That's a great brine recipe.

    Roti Duck

Re: Roti Duck Well, that's what any responsible male SHOULD do, CookShack!
  6. Re: Not much cooking going on Of course, the imaginary pants are gonna get a little snug!

    Hi to all

Re: Hi to all Wow! Did you EVER! And, as good as the KK is, you got lucky getting to have US as your new cooker family! We're like the in laws that won't ever leave you alone! But, we will compliment your cooking, tell you your yard looks great, give you helpful suggestions... and never ever leave the patio as long as the 'Q and beer are in abundance! Welcome!
  9. Re: Not much cooking going on Nope. Imaginary ribs lead to imaginary waistline.

    Roti Duck

Re: Roti Duck If I recall, the ever creative Cooks Illustrated did a chicken in some fabulous way, and was lamenting the flabby skin on tender meat. They did a final sear on the skin to crisp it up, and that seemed to do the trick. If I find the recipe again, I'll double check.

  12. Re: G'day Australia /Townsville Queensland I think it works because the food is upside down, too, Tony.
  13. Re: Smoking ducks (again) The hardest part about smoking ducks is getting them in the little rolling papers. The tail feathers and feet always stick out.
  14. Re: G'day from Canberra Australia Welcome, Rambo! Lovely to see you! Is it true what PaulR says, that you all walk upside down? Do you BBQ upside down, too? It's very confusing.
  15. Re: Grilling/Smoking Lite Livestrong.com's MyPlate is good stuff! I can recommend that one, too.

Re: Sanny Candy striper is toast. Curly's cousin is back in the pokey, I think. Gerard... well, that's kinda "need to know" information. Could tell you, but then you'd then have to hang a pic of The Hoff (in a Speedo) on your bedroom wall. Is the information really worth the price? Yah, I missed you all, too.
  20. Hi all. I wandered off and got lost in the forest. THIS CLOSE to getting eaten by bears and the like. Dennis left me a trail of breadcrumbs so I could find my way back. For those keeping track, Livvy is 15, and doing ok for a "mature" punkin. I am, of course, no older.
  21. I imagined rib eyes and roasty potatoes. And watermelon.
