mguerra
My neighbor got a new ceramic cooker, and some fuel, you can see he has the top vent just barely cracked for a low and slow:
Syzygies
That's the first gas-powered offset firebox I've ever seen!
Firemonkey
A ceramic offset...GENIUS! I bet you could do some awesome cold smoking in there.
Conodo12
One has to wonder if Doc ran up onto that porch, cracked the top, and ran back to take the pic so he could use that caption!!! But seriously, having used an offset cooker before, are we loading the back tank with fuel and cooking on the throne? Or is it the other way around?!?!? Firemonkey
I would think you load the back with food, and fuel in the bowl. Better physics...heat rises, while...well, nevermind.

bryan
This might be one case where I am actually glad my neighborhood has an HOA. So.. How long do you have to put it in??
mguerra
HOA He's my neighbor in the Texas sense. He lives 22 miles away. And believe me, down here, that's a neighbor. I HATE my HOA. But I like the neighborhood and the house, so, I just put up with their inane, petty bullshit.

Curly
Good for low-n-slow's I'll bet. Pecan logs will add a hint of flavor.
