Dave is going to have to tell us what this is because Sai came home with it sans the label because she said she did not want me to know how she paid for it..

I even tried to find the receipt to no avail.. It was almost 3lbs.. big and thick.

0.6% salt by weight (thanks DaveB)

Freshly ground black pepper (thanks Cozy/Grinder;-)

Fresh dried parsley (thanks World Spice)

Meat was still a little cool from the fridge.

Guava wood smoke at 230º indirect

Pulled at 124º using only the Guru probe

Drizzled with EVO infused with chilies..

Upper grill inverted down below at 650º little bit less than 1 minute per side.

The uniform texture from the reverse sear was really obvious with this big a cut of meat..

I'd say Sai did you a great favor by bringing home that bad boy! Nice!!!

Also, judging by the looks of that finished cook - the reverse sear is the only way to fly!! A touch more work but sooooo worth it! 8)

So, anybody want to guess how much it cost??? I say $200.00 which is a wild guess based on nothing. Dennis can show them to Sai and she can tell him or not as she chooses.

OK, I say it's a bone in rib eye (A wonderful cut of meat and one of my favorites !!!) Dennis you are a lucky man my friend..

Cost well Dennis says 3 pounds and at about $15 to $20 a pound I'm guessing $50...

$17.89 in Wilmette, I'll. I wouldn't guess on what grade of beef Sai purchased but I'm sure it is pricy in Indo. I would guess somewhere near 80/100 U.S. But the finished product looked like a million bucks!

Pried the truth out of her..

After convincing here that it was not fair not to divulge the info it seems there was a little smoke screen used here..

The bone in Steak was $38.

The story was to distract me away from what else she bought to total $246 at the imported food store..

The idea was to make me think she spent $70-80..

She said there as another one there frozen..

I think I'll have to pick it up for a rainy day..

Yes. Very common, please forgive the usage.

I'm not a big fan of acronyms. Serious academic papers don't have acronyms, but thinner fields with a greater emphasis on branding tend to be populated with acronyms. They serve as a warning that I'm walking in the wrong neighborhood.

Then there's the "treehouse" effect where one feels on the outside if one doesn't get the acronym. I don't need to belong to more little worlds.

It was actually a conspiracy to cover up the purchase of another pair of soccer shoes for my 12 year old boy.. Third pair he's carelessly left laying around and lost..

But I spotted them and everything came out in the wash..

Of course I would have got him another pair but I did tell him when I bought the second pair if he lost them he would be playing soccer in his tennis shoes..

I must have sounded convincing.

That's a great anecdote Dennis! BTW, I haven't tried the reverse sear yet on the KK, but after seeing these photos, I certainly will!
