MacKenzie's rotisserie chicken made me want to do one too. But I have room for two, so why not. If you haven't done one on your rotisserie yet, you need to give it a try. Very moist and flavorful.
Cooked at 375 and I added a little chunk of cherry wood to it. Took right at 2 hours since there was around 11lbs of chicken spinning.
Well I had to do my heritage cook today and I wanted to represent the Canuck land as best as I can.
On the menu
Bacon smoked with apple and glazed with fresh Canadian maple syrup. Smoked it for 3 hours at 225 on the joe Jr.
Fresh hand cut russet potatoes. I tried to buy a potato slicer and they all sucked so I did it by hand.
Added some st. Hubert's poutine gravy and fresh cheese curds.
Without further adieu I present my concoction
bosco's maple smoked bacon poutine
Hmmm... I'm thinking Chinese pancakes with julienne cucumber and scallions with a Hoisin reduction and a cilantro foam? 😜

Nice ribeye sear.
I see you now have your side shelves. Glad to see those catch up with the KK.
I don't have a basket splitter but I believe there is basically 2 parts. One piece to split the firebox in half and one piece to block the air from going up the unused side. Are you saying you have a third piece?
Hopefully somebody who has the basket splitter can chime in.
