  1. some wood fired action on the alfa today. i think i've made pizza once on this thing. every other cook has been non-pizza. baton bread yakitori skewers (roast, dip in tare sauce, roast again) hasselback potatoes garlic haricot vert chilean sea bass (tarragon buerre blanc)

  2. I had an itch for a 42 KK. This wood fired oven has helped to scratch that itch. Enjoying it so far and am happy with the clean up - just normal kitchen size dishes and sweeping up some ash. Winner alongside my existing kit.

  3. Cool. @Braai-Q got me onto these. He called them the KK quality pizza oven and has the 5 minuti. I just got the Allegro and am learning to use it. It's wood only so I am hoping that we don't end up with a wood fire ban any time soon! P.S. Your cooks are inspiring!

Cooking the last meal meant par/boiling your ingredients in wine, so I thought saving the broth and using it with a few additives like onion, garlic, butter, chive, lemon and some olive oil would revive the mix. Good, no plate, the pan was exceptional to taste and the plate held the shells. Mussels and little necks/Quahogs/////Mussels Mariniere.

  6. roasting coffee is fun, and i guess worth while if you are roasting like a kilo. this time with help from fireboard pro. the thing with this setup is you can't really hear the cracks due the thick concrete walls of the kk and the noisy motor. Brazil Natural 250g in 207g out. Columbia Washed 250g in 208g out. Ethopia Sidamo 250g in 208g out.

  7. I have been hearing more and more about the Denver Steak recently and thought I would give it a try. It is a great cut of meat if you haven't tied: https://www.tasteofhome.com/article/best-steak-youve-never-heard-of/ After marinating the Denver in a Sweet Memphis rub (with some soy sauce and white wine vinegar) for 12 hours, I smoked it on the KK23 for about an hour at 220f with some hickory and then seared it at about 700f for 90 seconds on each side.
