  5. @Izzy - you're just fine. We've all been there and done that. Remember, the latch is a 2 position latch. The first just keeps the lid closed and the second potion, when you really push in and feel it lock, if for sealing the gasket. After the fire has gone out after a cook, generally the next morning, I'll pop the latch back out to its first position. I've heard that keeps the gasket from flattening. Don't know if it's true or not, but ...

  8. Shelly - thanks. I've never reused planks before, but the guys at the BBQ Speciality store said to reuse if I wanted, so .... These planks cost a LOT more than cedar planks. I can get a set of 6 cedar planks for what one of these Sugar Maple planks cost. So reuse I will!
  9. Shelly - what a wonderful cook! That is one mouth-watering cook and every part of it says EAT ME! I really like how far you've come since we first met. Now you say "I just set the vents ..." and "I had to trust my settings ..." and you came home to a rock solid 225! You GO girl! You've got this figured out. Kudos to you on a lot of different fronts. Kudos!
  10. Yeah, @MacKenzie - As much healthy food as I'm eating lately, I'm certainly going to make up for it tomorrow, the 4th! It was a nice cook.
  11. Posted Today, 06:02 PM Howdy KKers! So last evening was a nice night to try a cook that I only do occasionally ... planked salmon. I found these Canadian Sugar Maple planks at the local BBQ Speciality Shop and they were on sale ... at $14.95! I'm a sucker and got a package as I had a nice couple of pieces of salmon marinating in an olive oil, garlic, a tad bit of lemon juice, red pepper flakes, etc. Here is that cook. I soaked the planks about 2 hours as prescribed on the packaging and here it is going on the grate. This picture shows the salmon placed on the plank after the plank had heated for about 45 minutes and was flipped. I decided to use the marinade and poured it on top of the salmon. Here is a top view immediately the salmon went on the plank. This is a shot of the salmon right before I pulled it. Now the table shots ... This is a salad a Friend made for me; her's was about a third this size! Pete The Salt Pig likes seeing me eat salad instead of his kin! Here are a couple of money shots. This was a really nice cook. I'm a big fan os fish and I'll cook fish just about any way you can imagine. In every previous cook, I've always tossed the plank but this time the Canadian Sugar Maple came through the cook in great shape. I washed it off and put it back on the grate to sanitize and dry at the direction of the guys at the BBQ Speciality Store. We'll see how that works out. Have a wonderful and safe 4th of July Holiday.   12. @MadMedik - Haven't seen you here in quite a spell. I hope all is well in your world. Looks as if you're preparing to feed the 101st Airborne Division tomorrow! I'm looking forward to seeing the money shot! I'm only doing a single butt this evening in prep for a small gathering tomorrow.
  13. @Izzy - I"ll see what I can do about getting a pic of TheBeast posted here so that you can see where the cotter pin goes. I've never had the Coconut Char take as long as you indicate. Open the air control manifold wide open. Both Dials. I just ran out and snapped a pic of the hinge mechanism on TheBeast. Here are the pics. You can clearly see the cotter pins.

  16. Charles, there are a lot of nice peaches I see there, but only one worth looking at ... and I think you know exactly the one I'm talking about! Susan, you look absolutely beautiful. Love that flower in your hair. Nice pics, Friend. Its about peach season around here and there is an orchard east of town. I think I'm heading out there this week sometime to pick my own.
  17. Exactly right, Charles. That works best according to @Syzygies. I drilled too many my first time out. I now have just 3 x 1/8" holes in mine. I love it. I don't speak my lid with flour paste like Syzygies, but then my lid just fits right on and very little smoke exist the lid. I have a friend who seals his with aluminum foil tripled over. The pot just works.
  18. Shelly - how your husband scored those reservations is a real coup! That is an amazing place ... great food. I went a few years ago and my personal Zagat vote is A-FREAKING-MAZING. Enjoy! And if nobody understand your excitement, you need new friends! LOL!!
  19. Chris, that's a gorgeous KK; absolutely gorgeous! Reminds me of Beauty! The 19" TT. Congrats to you! You're going to be stunned when you see your KK in person. That picture is great, but nothing like the real thing!

  23. @Syzygies - Hi Friend. I just thought you should know I've posted your brilliant idea for the smoke pot in a few other BBQ Forums and it has been met with universal acclaim. In fact the word that is most used is "Genius". I've given you proper attribution and folks have asked that I tell you how much they love your invention. It really is a game changer for them, especially those with kamados of every strip. You're becoming quite the BBQ sensation. I just though you should know that your little smoke pot is really changing the way more than a few look at kamados. Thanks for sharing that jewel with us here.
