  1. I do use guava from time to time, i had a large strawberry guava tree that was to close to the house so i cut it down and cut most of the tree into biscuits. One large branch is going to be used as a foot rail for the bar in the outdoor kitchen. I also use kaiwa which a hawaiian version of mesquite. I would have to say my favorite is the kaiwe.
  2. A little brine, some seasoning... It's got potential! When she opens her wings its about a 4' wing span for Paul that's 122 centimeters. But mostly she likes to relax. Thanks Sanny the brine was the key (pictures about 15 years old)

  4. The Black Pearls located in Hawaii. Maui, Makawao. Black on black Gen II's OTB ( outside the box ) In my opinion the best grill, slow cooker, smoker and oven you can buy.
  5. Well you now how it is when you want to cook two different things at the same time and i know how i am once i got one here I'd wish i had two. Kind of broke the bank but now that i have them i think i did the right thing. Once i get the outdoor kitchen done we'll be using them most everyday. Actually were doing that now
  6. First thing to go on the grill was turkey then ahi and salmon, and today were doing turkey again.
  7. The Black Pearls see there first sunrise on Maui. I still need to finish there home on the leeward side of the house, so for now they will have to stay over here on the windward lanai.
  8. The kk's got here after 2 long ocean voyages and look better than i expected. Barely had them out of the crates and started our first cook.
  9. Not sure yet, depends on how long I'm taking of work (2 or 3 islands?) definitely stay in honolulu for a few days. Beyond that dunno, our neighbours lived in Hawaii for years (in the sixties so probably changed a bit). My wife went years ago as well... So suggestions?? (Deej is going to move this out of the thread whaddya reckon??) Weather in July is generally hot an dry. Oahu [Honolulu] has over one million people that live there not including tourists so there can be alot of people a the beaches. Get out of the city and go to the north shore. Kauai [the garden isle] is the wettest island but not so much in the summer months, very tropical. very green, nice beaches, not nearly as crowded as Oahu. Maui [The valley isle] My home is the second largest next to Hawaii. Lots of great beaches. From the Hana side [tropical rain forest] to the west side [Lahaina that was once an old whaling town] very dry. In the summer at the beach temperatures can be in the low 90's head up to Haleakala and early morning it will be about 45. Lots to see and do Hawaii [The big island] Is just that big, the drive from Kona to Hilo is about 2 hours. Again lots to see and do. Like all the islands there is a tropical wet side and a dry side, Hilo is a much greener than Kona. You also have the only active volcano in Hawaii, you can only drive so far then it's a hike over freshly hard lava to get to the lava flow. Hope that helped
  10. You may be right, a day late and a dollar short i got mine about 2 weeks ago. The up side is my KK's will be here tomorrow, they lost them today because the crates only had Dennis's name on them. I will go and pick them up myself tomorrow morning and i have a turkey brineing and ready to go. i plan on using the DigiQ II. I will take a lot of pictures as soon as i figure out how to send them i will.
  11. I just got 2 DigiQ II With shipping cost me $546.89, why did i not get the little bags. Did you pay extra for those or is it did they think don't i need no stinking baggis
  12. Re: Next try Yes, I did use the heat deflector... But I think I want to try with out it as I put the stone on the upper sear grill and the cheese on top was done before the dough was browned underneath.. This time I started with the same dough but at room temp and is was just a little better.. This stuff was just springy.. I added lots of flour to it and in it's more dry state I was able to roll out thinner crusts but it still slowly shrunk back up. Gotta get one of those wood pizza scoopers as I used cardboard and getting it off with out the topping all rolling off was a nightmare.. Tasted great.. even the crust! Thanks everybody for all your tips.. I got a Super Peel last week www.superpeel.com haven't used mine yet but i heard great things about it. If it works as well as in there web video it should make pizza or bread moving a breeze
  13. New-be question - I just got my ez que rotisserie with a 50 lb motor, i assume it's a 50 there are no markings on it and no packing slip. I am still waiting for my grills so i don't know if i have everything i need. Will the Gen II grill come with the rotisserie shafts that screw into the cradle and is there a bracket to hold the motor? Mahalo, Don
  14. I started doing the brine method a few years back and will never go back. I do put rosemary [ among other things ] from our herb garden into the brine and the flavor is all though the meat right to the bone. I never had the same result by putting it in a rub. Also i never baste, it just runs off the skin back into the pan and your letting heat out. The turkey is always moist and that's do to the brine. Everyone has there own way off cooking turkey, this works best for me. However you cook it it's turkey and that's always good.

  16. I hear ya things are a little pricey in the islands. Fortunately i got in before the real estate went through the roof. The down side to living here is your 2500 miles from the closest land mass, so everything costs more... a lot more.

  19. Aloha leeherd, Welcome to Maui. I live up in Makawao. I moved to Kihei about 29 years ago then to Napili and Kahana, I've been upcountry for 11 years now. Hope you like it here, Maui moves a little slow for some people. Looking forward to the kk's I've always cooked with charcoal but on a rusty metal grill. If things stay on track i should have the grills early Nov. Hey Pirate Where are you at on Maui? I just moved to the Kihei area about a month ago. Got an old school blue tile classic KK on the boat now from Seattle. I am looking forward to firing it up in the land of year round grilling. I will vouch for Dennis he has been great to me. I understand your concern about shelling out the big dollars for a grill online. "You won't be disappointed!" Once you get the grills your only problem is going to be "overeating" well[/quote
  20. I'm new to the forum, congrats on 52. I'm also 52 but member 217. I can't wait till i can send a message when I'm the same age as my member number. I eat well and take care of myself so i don't see a problem. Still waiting for my kk's, there on the water i have two black on black Gen II's [The Twins ] coming. I was going to get BGE's then i saw the Naked Whiz review and never looked back. i've being reading the forum for some time now and feel i know most of you and you sound like a lot of fun and people i can trust. Emailing Dennis he sounds like someone i could call a friend mosty from what the members say. i have never spent this much money on the internet. Once they land in Long Beach i still have to get them on a boat to Maui and Dennis is ready to help with that to. I will do my best to get pictures of the grills in my driveway and lanai because from what i can tell without pictures it didn't happen
