    Does anyone else use lava rock to catch grease and let it build up? Could this be the source of the problem. Could it be the air in Texas is hot?
  4. I have been looking at Big oven and Cook'N.. http://cookbook-recipe-software-review. ... tails.html I don't need a pile of recipes. But a book capability is necessary for what I want to do. Example: Brisket book so I can compare, renivate, and eliminate. I am working on what I refer to as my Top-10 recipes. I use an old software program now but It's time to update. So thought I would tap into the forum brain trust.

She just needs a chapter on plus 700F pizza and she will have the "Pizza Grill Bible" Have talked with "Bev" she is a really nice lady. Bev wants a KK for 7-800 degree pizza cooks but is waiting to move to Colorado. If she doesn't move soon we will have done her research for her.

  11. I suggest the use of "Sir Lancelot" flour from King Arthur Mills. Use a food processor with the bottom metal blade to mix the dough. As soon as it bounces to top of blade you are through making dough. Separate into 2 balls (2 12" pizzas - 1 ball= 1 16" pizza) and store covered not sealed in fridge a minimum of 3 days.   12. Congrats on the 1st cook. No, I do not know much about pizza stones. As a result I ordered the new one from Dennis. I do know about him. Anything he sells is above top of the line. There are only two rules that I can see. 1) put it in and have it heat up with the cooker. 2) Do not let it get wet. If you like email me at: [email protected] and I'll send you a good Pizza dough recipe. ( Will send to all who reply) (corrected_copy) You should get some stone replies, there are some good pizza cooks on this forum including Dennis. (He makes the stones the way he likes them)

Looking forward to some of your recipes. Any thoughts on how to roast a goat? You are gonna love cooking on your Komodo Kamado. And the first cook was????

  15. Just start with a small fire and slowly work temp up to desired level. The KK holds its heat. Just makes for a little more sipping time. Oh yea, you might reach over and give her a little pat once in a while. After all she is in a strange new place.
  16. From your write up it seems that upgrading is the right thing to do. Your appreciation of all the improvements sure says a lot. It must be nice to get that WOW feeling again the second time around. Congratulations on your new unit!

    Moving the KK

    A case of Bud or a bottle of Crown Royal or if push comes to shove a 20 dollar bill should do the job convincing the driver he can handle the job for you. I gave the guy the choice of a case of bud ot a bottle of Crown Royal. He took the Bud. Well this is Redneck Country. Keep it in the crate. Much safer to handle. Dennis has designed the crate so it will lift off when you remove 4 heavy duty screws. Piece of cake. Hope this helps.
