  2. Who mentioned lamb? They inspired me to take a leg out of the fridge for tonight. Anyone tasted the Saperavi grape? Very tasty- oldest known grape on the planet. Both were delicious. Sorry, only video on the KK spit roasting. Started direct and after 25 minutes( once dripping) placed a roasting tray to catch the drippings with mint sprigs and a home made BBQ/ balsamic sauce watered down. Sent from my iPhone using Tapatalk

  4. Lamb remains my favourite meat, especially the African breeds we are now farming here for meat. If you see Dorper or Meatmaster breeds, try it out. I just took delivery of 10 more lambs and distributed amongst friends so I expect to be cooking some more soon. Sent from my iPhone using Tapatalk

  6. Not much more to ad here. Bards you can cook a leg of lamb to medium rare or have it fall off the bone. For pulled lamb I’d prefer the shoulder over the leg. Also, I’d highly recommend balsamic vinegar even if it’s just to moisten the meat to help your rubs stick. herbs that suit- garlic, cumin, rosemary. Sent from my iPhone using Tapatalk

  11. Congrats on the decision to invest Dono. My tip for you is to take 12 months to understand the manual settings on your KK and what temperature you can hold at before investing in a fan. We had a grand total of 2 community COVID cases diagnosed this week, so the State Government declares the capital city plus 3 surrounding Shires will be locked down at 5pm for 3 days( Thursday before Easter Friday). What do 2 million people within the lockdown area do? Drive to the coast outside the lock down area. This is Tugun on The Gold Coast.... with a full moon rising over The Pacific Ocean.   17. Some good points there Forrest. However, with a KK if you target 50deg over your desired temperature, it’ll take an hour to come back to cooking temp and it’ll be tough winding your fire up and down. I subscribe to Dennis’s instruction to shift the smaller pieces of charcoal to the outside edge and place larger lump in the middle. This hasn’t let me down. Sent from my iPhone using Tapatalk
  18. The fishing was average Troble. Tyrus those 4WD s are waiting to board the ferry onto Fraser Island and yes they allow you to cover a lot more ground. Much of the island is overgrown with native bush, however, there are driving tracks and walking tracks throughout. Plenty get bogged in the soft sand and there are many cleverly engineered solutions to handle the terrain. That’s part of the challenge and fun of 4wding Sent from my iPhone using Tapatalk

  22. Just wanted to share this. Celebrating a birthday with some friends in a place called Rainbow Beach. Population about 1200 people, and beaches like this. It’s south from a world heritage park called Fraser Island. A really beautiful place to visit. The sand here is so fine and when placed in a tall jar with water, it settles in the colours of a rainbow. Although we don’t get snow in our part of the world, Mac, Jon, I do like seeing your photos and try to imagine how different that must be to what I am experiencing. Sent from my iPhone using Tapatalk

It’s harder than it should be sourcing whole grains here.... considering we are one of the worlds largest supplier of wheat and other cereals. Fishing this weekend so may dust it off next weekend.   24. Thank you rokdok. It’s only 9 months old and I am expecting greater depth and geometry with shaded pockets as the trees mature. There are two frangipani trees around the fire pit with an extremely strong fragrance- especially in the evenings that smell like an english garden rose.   25. Forrest once I had a rough design of the hardscaping in the yard, I passed the plans onto a landscape architect. This was the best thing I ever did. He added a couple of beds and varied a a few bed sizes, then provide a complete list of every plant species name and mapped them individually on a plan. I gave the list to a wholesale nursery and they delivered a truck load of plants for me to plant according to the plan. Troble did a similar thing. Look for a landscape architect who specialises in your climate. We are in a semi tropical zone and the plants I have are suited to my climate.... and low maintenance. BTW, given I provided the base plan, the architect was cheap. Look around your commercial precinct for a garden you like and ask the owners who designed it. Sent from my iPhone using Tapatalk
