Yep...brining is good In reply to porkchops post regarding enhanced/injected/pre-brined meats, i suggest checking your local BJs wholesale. Most supermarket chickens and roasts, unless you pay a premium for the fresh/organic/whatever have been molested like this. I have found that BJs meats are not enhanced, and the lower price is a bonus. My local BJs in Orlando sells Perdue chickens, "fresh and minimally processed" for $.79/lb. That way, you can brine your own flavors into it. BTW, not all big-box clubs are the same, so pay attention to the fine print. My local Sams club carries only "enhanced" chickens, not the fresh ones.

LeadDog - I was looking at making a big order of various smoke woods from Chigger Creek in Missouri. They listed their various woods, and some characteristics of each. I saw that they list Grape wood as well. http://www.chiggercreekproducts.net/files/14519833.pdf Who better to ask about it than our resident grape monger? Have you tried smoking with Grape?

I will second the pizza suggestion. I have made pizza using a light coating of chef Jukes raspberry chipotle bbq sauce in place of standard pizza sauce, added onions, green peppers and pulled pork on top of the cheese. It was even the favorite of my 9 year olds finicky friends! Though they did try picking the vegetables off

I brined a spatchcocked chicken, duted it with some rub, and cooked it up. Served with some mashed potatoes, and sauted spinach. Nothin but half a chicken leftover to take pictures of, so you will have to visualize.

I can see getting one in 84, but after about 94 there is no excuse! Sanny, you may wanna ask Dennis about the Blue tiled KK in southern MD. Its had some small fit and finsh issues, easily corrected and is a great price, within a couple hundred mile drive of you (no shipping fees ) Any bean counter would appreciate the savings -
I am almost afraid to post this, and unleash a maelstrom, but I just have to ask! Sam, can you explain how this works: I would expect that the organic farms do not spend as much on things such as fertilizer, but do they not also produce much lower yield per acre than conventional production? I dont want to fuel an argument, but rather would just like your insight. {ducks and runs for cover} Now, my wholly unscientific opinion regarding "junk" of any sort in the food supply... The term junk is subjective. Personally, I try to buy meats that are not enhanced with 12% solution containing things I cannot even pronounce. Doing so, in my opinion would be adding "junk" to my food supply. Many others prefer the flexibility in preparation methods, and taste enhancements from the solutions. Is it harmful? Likely not immediately, probably not even in the long term, but there is an undeniable possibility that some of these substances, which are to some degree residual in various parts of our body can eventually be shown to cause harm. I consider hormones in livestock similarly. I prefer that they were not present, but since I cant farm my own livestock, I have to go with whats available and trust/hope for the best.

Sanny has a Mexi-K, thats reason enough I cannot defend the Rochester move, though...I would rather cook on a smokey joe BTW, Sanny, would it have been better if he accepted the offer, and moved to the land of frozen Buffalo? (Talk about thermal shock...your mexi-K wouldnt stand a chance! )

I have a few FS canisters, too. I have tried them a few times for marinades, and had inconclusive results. I am really not sure if marinating under a vac made much difference. I didnt have a control group for comparison, though. Next time I will try some in the vac canister and some in a ziplock and see if I can notice a difference.

Look as Sanny chiming in with the voice of reason...almost like a surrogate wife! But I can admit that she has a point (something you cannot do with a real wife) , 5# just isnt going to cut it. We need the 5 gallon bucket size. Dj, you want a project to work on?? The foodsaver group has a discussion where people are vac sealing 5 gallon buckets All you have to do is fabricate a rotation system! Honestly, I think the spinning is a gimmick. The only valid use I could see is to prevent separation of amarinade, and if I am concerned with that, I can blend it to get a better emulsification.
