I have seen tri-tip cut into steaks, but that was when I lived in Missouri. Never saw a roast out there. I *think* I have seen the roast at BJs here in Orlando - might be worth a shot. Maybe ask the meat monger if he can dig one up for you? I am pretty sure that the tri-tip is the end of the sirloin, and is named because of its shape. Maybe its called something else in locally? Dont know if sirloin tip roast is the same cut, could be worth asking?

After being inspired by porkchops post some time ago where he rolled his meatloaf in a screen, I decided to give the screen method a try. I simply bent my screens into a cradle, rather than rolling them tightly because I had coated the top with a mix of brown sugar and Ketchup to make a sweet crust. The screens were great to simply lift them onto, and off of the grill. I didnt even need tongs to remove them, since the screen did not get too hot to lift it from the top edges. No recipe, but I would encourage all to use your favorite recipe and try it on the KK. These screens can be found at Wal-Mart for $.93 each, and they wash up just fine. I have used them for jerky strips and vegetables as well. Cooking at 400 or so indirect: Ready to eat, along with a solitary piece of chicken for my vigilantly healthy mother:

What Bands? The BEST ceramic cookers dont have bands! Now, the one on my back patio does, and I suspect that is why its falling apart

D_J would probably be the east coast equivalent, building all sorts of items to ensure his survivial. We would need to recruit him to join our faction. Im giving Leaddog the nod because he has at least 800 bottles of wine on hand, and can make more when we run out

Well, sea salt and kosher are all I had on hand. Sea salt for the grinder you are so fond of and kosher for the dredger on the stove. My sea salt isn't the exotic varieties, its the coarse ground / $1.50 a can variety from the grocery store

One idea for rubs that you may try is to grind them after you mix them. I have started putting all my rub ingredients into a magic bullet, and then grinding them to a fine powder before using. Seems to work well. My raw sugar and sea salt are pretty course, but 10 seconds of grinding and everything is a consistent fine powder. Put the shaker lid on, and I am all set.

I think it may be lamb as well. Too dark for pork, small for beef or venison. Leaddog, lets see... You butcher your own meat, Make your own wine, cook your own lump, ride a bicycle more than recreationally... If society ever crumbles, I am going to Leaddogs house. Whats next...you have a wind farm, too?

Very nice, and functional, too. Looks to me like it goes in from the inside. I like that it can remain in place and not interfere with the draft door.

DJ, with all of your ideas and engineering, I sure hope you never get a Jeep! You would never sleep once you started pondering all of the upgrades and parts you could build or buy! You could already start a cottage business with your KK inventions alone.

Yeah, we have an infestation problem down here with NY/NJ'ers nowadays. I was thinking another storm or two and they would tuck and run. I was just in Pensacola for a couple weeks last month and stayed on the beach. Its been a couple of years now and the damage was still sobering.

Welcome, Gregg! Many of us have come across this forum in much the same way you have. Despite being burned previously, we do have something to be excited about here. There are good recipes that get posted, feel free to share some of your favorites! Should you run across some of our local inhabitants, dont be too alarmed. Gerard may be grouchy, but he is harmless. D_J is a whole 'nother story though. Run from him.

Yeah, My official 15" RJ supplied heat deflector, when used on the RJ supplied lower bracket, is the RJ declared cause of all my cracks and loose tiles, too. I will second the marked difference in efficiency when using any heat deflector. The firebox area is much hotter than the area above, certainly at roasting temps. Far shorter lump life is the result. That said, I would prefer (and like the 2 piece idea) the largest heat shield possible without causing damage to the grill. .

Have you used alone for cooking very much? Does it do a good job at baking (or higher) temps?

I was thinking the same thing. I would likely only use it for ignition, like I do with my current POS. But it sure looks like a decent functioning burner, and in that event it may be handy to have for an occasional fast cook, like if the wife wants to grill hotdogs when I am gone, or maybe a quick sear on some blackened salmon or such. No way it would be my primary fuel source...as bugs would say, "That's unAmerican"

I have taken that thing apart as far as it would go. Even removed the Orifice to make sure I had the smaller LP one. I am not sure it EVER worked right I think I saw blue flame from it ONCE when I was using it to heat/clean the grill with the firebox removed (dont tell porkchop). But with the fire ring in place, it hoses up the mixture and if I open it more than half throttle, it will blow out or burn way too rich. And we know that removing the brittle firebox is bad news Sanny, does yours burn with a nice clean, blue flame when you have the firebox and lumpsaver in the grill?
