Mark Jacobs Posted December 30, 2024 Report Posted December 30, 2024 First time. It vastly exceeded my wife's expectations. A simple honey bbq rub was applied. 6
Tyrus Posted December 30, 2024 Report Posted December 30, 2024 That's a cut I'm unfamiliar with, something you generally don't see. Where'd you find it? It looks delicious.
Mark Jacobs Posted December 31, 2024 Author Report Posted December 31, 2024 Costco had lots of them just before Christmas. $2.99/lb
tony b Posted December 31, 2024 Report Posted December 31, 2024 (edited) You usually see it presented upright in a ring with those poofy chef's hats on the ends of the bones, typically stuffed with something in the middle. Crown Roast of Pork. Edited December 31, 2024 by tony b
Paul Posted January 4 Report Posted January 4 I have six in the freezer right now. I've been buying them for years. I don't get as fancy as @tony b suggest, but a good dry brine and rub, pecan and manzanita wood, pulled at 132°-135° and rested is hard to beat. If I want to impress someone I'll cut them a single bone - double cut. They're almost 3" thick! 2 1
