  1. OK, I've not been to the forums for years. But a year or so I was having a problem holding a low and slow on my 15 year old KK and I posted to Dennis. Darned if he didn't call me to walk me through a fix. Turned out to be nothing more than un-attach and re-attach my gasket with some heat resistant silicon. Well, I did loosen the top to make sure it was square. The very next cook I set it to 225 and it never moved. I've cooked butts and ribs since then with no effort at all. I've known Dennis since he was just getting started with the KK business (16-18 years ago?) and know him to be an incredible business savie person and a man of great personal integrity. I don't know how much time he has spent helping me over the years but if he does that with all of his customers, and I'm sure he does, I don't know how his wife has not left him for neglect by now. Me and the other Kamado owners (the business he saved to become KK) gave him heck at first because we thought he may be a charlaton like the former owner, but no one ever regrets doing business with Denis, he will find a way to right any perceived wrong. So Dennis, this post is basically a shout out to you and to let you know how much I have always appreciated your customer service, I rate it 100%. Thanks again, Kurt
  2. Re: Knives Dave, that's right! I love my henckels and spent what I considered a lot of money on them. That's not to say I wouldn't buy all kinds of really high end functional and artsy knives if I had the funds. I must say, it's very difficult to look at the links in this thread and not want those knives. But who among us doesn't love knives! Many moons ago I bought a set of 4 Forgecraft hi-carbon knives (very old) at a yard sale for 2 dollars. They came with a hanging wooden holder and I was gonna hang them up in the cabin for looks. Now, one of them is one of my favorite knives. Not a high end knife, but I love it. My guess is that these will be inherited by my daughter.
  3. Re: Knives I was at a thrift store the other day and got a block of Henckles (9 knives with 2 missing) for $9 bucks. It had a $19 sticker but since 2 were missing she took $10 off. There was 1 Wusthof in there 2. And coincidentally, all of my cutlery in Henckles. Yes, I'll be visiting that store again. One of the better deals I've ever gotten at the thrift store. Not damascus steel, but at a dollar a knife I'm happy

There were many onlookers that were waiting for you to make ONE mistake in your CS and after 6 years (is that right) they've now either bought one or left the building. I just feel sorry for those that left the building Keep on doing what you do bro, somehow it just keeps on getting better.

Although I typically don't understand most of what you write Syzygies, dang, it sounds like you think this fella is the anti-gore for creating something that doesn't work in your foodsaver (which I also have). Had he done it your way none of the folks with the other machines could use it right? What would have been the right thing for him to do. You go ahead and write it all out and I'll have someone explain it to me

T Rex I'm with you, reluctantly surrender the plate and then when you need another big toy (maybe another cooker) you can remind here of the sacrifice.
  17. Yeah, I was reminding my daughter of that very thing this week-end I have eaten butter dipped lobster until I felt like I had several pounds of butter in my stomach...definately too much of a good thing. But it was really good up until then.

    Creosote ?

    After I cook a butt (any long slow cook really) I open it up and let it get pretty hot. Seems to clean it out real nice.
