Tofu challenge sucks... Thanks for the tips.

All KK cabinets and side tables are undercut so the roti motor can sit there.. This 23" Ultimate comparison shot shows how wide the 22"TT is at the charcoal basket.. much wider than the standing grills. This width along with the grill shaped charcoal basket and a thin firebox creates proportionally the largest grilling "high-temp sweet spot" on any KK. As you can see the floor of this table top is the same distance to the main grill as the KK standing grills. Pretty cool eeh?

He should target amusement parks and fairs. That's where the money is for novelty foods like this.

Making Syzygies bread again today and the KK did get a little hotter than I planned, 530F instead of 475 F but watch what happened- Ready to flip and score notice someone put the loaf in the brotform upside down. Baked and there is a little explosion. In the house cooking. Taste test, I think I'll go back for more.;) Crumb view - and taste test, I think I need to double check the flavour.
