  1. You can bake bread and pizza in any grill that can handle a baking stone. No way you’d do steam in a kettle, but nothing wrong with baking “naked” (keep yer drawers on...talking about lack of steam). A Weber Kettle is, IMO, still one of the best grills out there for the price. Add a Slow n’ Sear and it makes a great smoker too. It’s everybody’s first grill for a darn good reason. Once you’re ready to drop a tad more on the best of the best, Komodo Kamado is where you want to be. Skip Kamado Joe entirely.

  3. Check out the moisture drawn out of the fillet after only 10 hours. I assume this is from the salt. Sent from my iPhone using Tapatalk

  4. Looks like someone removed the scales if I'm not mistaken. Every weekend at game time the girls ask for salmon and obviously I oblige. Smoked salmon especially in Ireland at breakfeast is my favorite so this looks so fantastic..imagine that a salmon xmas tree, who woulda knew. Great job.

  5. Cheers Tyrus. Yes, one of our best products and rarely spoken about. Thought about the purple crack and yes it would, so does beetroot and fresh horseradish. Wanted to keep this simple. Here is the cold smoke set up. There’s a bowl of ice under the salmon. That fillet would be about 23 inches long! [emoji23] Smoked for about an hour. Then removed and applied the salt, sugar paste Then added the dill. Then vac sealed and back in the fridge. There is a little salt on the skin side. Found the flavours can’t really penetrate the skin so didn’t bother coating it. Sent from my iPhone using Tapatalk

  7. Just get 2 that stack, then drill the holes yourself in one. I made a "sifter" out of 1/2" wire fabric in a wood frame made from 1x1 lumber, just slightly bigger than the lid on my plastic tub for charcoal. Dump some charcoal onto it, give it a shake to remove the smalls/fines (kinda like panning for gold - ha, ha!), dump the larger pieces into the tub, toss the dust overboard off the deck - rinse, repeat, until the tub is full.

  9. I used the cake pan with aluminium disc for this sour dough bread. Can't wait to cut and taste it. It is going to fit nicely into the toaster.
