  1. We just took delivery on a 21 with autumn gold pebbles. We were looking at the 23 but this one became available out of the Las Vegas warehouse so we jumped on it. Looks like it will be just right for the two of us. We mostly need it for smoking, roasting and baking. Our typical cooks are brisket, ribs, pork belly, pork shoulder, pastrami, oysters, breads, pizzas, strombolis... (but I'll throw pretty much anything on the smoker) We've been using a small home built water smoker that requires a lot of temperature management. It was a real thrill doing the burn-in and seeing the KK sit for hours at a constant temperature on a fairly windy day. This is my first time seeing a KK in real life and wow, it's exactly like everyone says. Cheers, Eric & Sarah

  4. As I drove past the local Ace Hardware today, I thought to myself, I need to stop in there and see if I can order the Weekend Warrior charcoal and have it delivered here. I've always been a fan and I haven't been able to get it here for years now.

I'd look harder at how you built your fire and where did you light it. for a low and slow you want big chunks of lump on the bottom then medium sized chunks over that and then some smalls on top. Then I will typically light in the center and let the fire work it's way to the outsides on it's own for a really long cook. I am 14 hours into a pork shoulder right now and i took a couple pics as i was filling my basket.
