  1. Keep It Simple When I visited Glenn in AZ last fall I talked to him about BBQ. He is really right on, since seeing Glenn I have reduced my BBQ to things like salt & pepper and stuffing my Roti chickens with cut up granny smith apples. My wife says just keep doing what you are doing this is best tasting yet. Of course those TX old time BBQ joints have tons of patina on the cooking system.
  2. New Side Cabinets It might be nice to have those cabinets available as do it yourself assembly. You could pack them as flat boxes so maybe shipping and their cost would be available for less $ for those that like to put things together.
  3. EZQue Motor Shaft Hole All the EZQ Motors have a 5/16" shaft hole in the Battery Operated and the 50# 110V Motor. It is one place that it seems there is a standard size. I have an old Motor for a Rotisserie system for Weber Kettle and it is 5/16".
  4. Thermoplactic Set Point I would guess that your material has a natural thermoplastic set point that requires it reach a certain temperature to occurr.
  5. New Side Cabinets I had built a large cabinet before I had the KK to replace the bad one. One thing I wish was that I had are vertical separators to match the size of the extra KK shelves that are available with the KK. Hope there is room for such an idea in your BEAUFIFUL new cabinets.
  6. Mississippi Welcome, I went through Aviation Cadets Basic Flying school March 1951 through Sept 1951 at Greenville . Got my first introduction to Grits there and also had the best T-Bone steak I have ever tasted at Does steak house. Went back there in 2002 and his son was still cooking them at the same place. A very old house with warping floors.
  7. Also there is lots of flex in KK motor bracket as shown in the pictures. By making my own shaft from 5/16 tool steel I got rid of rotation slop. I ground down the other end to .295 to fit KK Roti bearing that is in the KK body.

  9. Roti Shaft Dennis the rotisserie motors have a standard square hole that is 5/16". Your bearing hole on the KK is slightly smaller, so you have been making the shaft to fit it but the smaller has some wobble in the Motors. I had received from you the motor shaft with a spring and it does come loose. Another reason is because your SS bracket to hold the motor is too thin and has lots of flex in it. All the motor brackets that come with the EZQ systems are thicker, which I noticed when I had gotten their Hobo unit. I bought some 5/16" tool steel and only ground down one end to fit your KK bearing. This helped mine work better. To take care of the bracket flexing I used a cable tie near the top of the motor and slid it under and up on your motor bracket which stopped the the motor flexing.

  11. IR Thermometer The Whiz is correct it is set to 95*, however I have one with same performance and I use it to check surface temp of searing steaks, rotto chicken, & pizza stone temp.

  13. Cleaning the Rotisserie The EZQ rotisserie is made with best stainless steel and has TIG welds so there are not catching places. The 17" baskets used for the KK will fit in any dishwasher. The other things like the meat holders are also SS and they are a snap to undue from the basket. All said and done I just put it in the dishwasher and the small amount of some pieces of skin come off and it looks just like new. I used the Weber baskets because they keep the lump fire away from direct flame on the rotisserie. I have used my EZQ at least 8 times so far and my wife agrees it is the best chicken and turkey she has ever tasted. But like most things in life it is in the eye of the beholder.
  14. What's It For? The grinding mechanism is a copy of a very old coffee grinder, but my son wanted one for grinding larger quantities of pepper for the rubs he made. So I had one that is mounted on a square base and made a box for him. He said it worked great on the pepper corns. I decided to enter the Texas State Fair for 2008 this fall and came up with a design that was round and made the base in segmented style with Dymondwood a Rutland Plywood Corp product. You can buy such grinders from Penn State Ind. who have lots of stuff for woodturners.

  16. Cooling the Turkey Breast I have cooked on the rotisserie: several chickens & two 12-14# chickens. I cook the chickens for 2 hours at 210* then go up to 350* until the thigh reads at 175, and the breast will read slightly over that. I cook the turkeys until the show 130* on thermopen and then finish off at 350* just like the chickens. Remove from KK and put in oven with foil over top for at least 30 minutes. With the rotisserie I have stopped using Glenn's cooling of the breast system. . In every case the breast was super moist and tender and the thigh joints did not have any sign of blood. I had talked to Glenn about using the rotisserie and he agreed that it would infuse all the juices throughout the bird. Every time I have served this to friends and relatives they say it is the best chicken or turkey they have ever tasted.
  17. Firemonkey's Pepper Corn Mix You need to check for gumming from the 3-Mix, because some of the pink, or white pepper corns can be gummy inside. You can undue the bottom adjuster and clean out the grinding system. I made a set of Mills for my daughter and her husband and he told me he couldn't get any grinding out of the pepper mill. I asked him if he was using one of the mixes that has different pepper corns, and he said yes. I told him how to clean his, and now works fine.
  18. Johnnyboy you can solve your cleaning problem by buying 2, one for coffee & one for spices.
  19. The Grinder mechanisms are easy to take apart and then clean them. You just have to remove the two bolts that hold the grinder to the bowl. I coated the inside of the bowl with acrylic lacquer that is used for automobile clear coat which is very tough stuff. You should be able to wipe clean the bowl with a damp cloth.
  20. The Grinder is 3" in diameter at its base. The Dymondwood bottom is 4.75" in diameter and 4.0" tall. I did not like the wooden crank handle and I have cut off the pin that held it on and I am going to install a matching Dymondwood handle. It will hold 1/2 cup of ground spice/coffee in the bottom container. My son had asked me about a pepper grinder that would grind out at least a 1/4 cup easily, I showed him a grinder I had bought some time ago but had never built a box to house it. These grinders you can buy from craft supplies like Penn State Ind. always show a box with a pull out draw as the wood base. After I quickly did a box one for Tom, he said it was great for grinding pepper so he could make his own very fresh BBQ Rub. I decided to try a round one using my segmented techniques and I really like that way it came out. I am going to enter it in the 2008 Texas State Fair Creative Arts Division.

  23. I got a cover for my KK, it was just built in a superior manner. I have had it for over a year and it looks like new and not a single stich has come undone. It had extra material at obvious points such as the handle latch. He really knows what he is doing and at a great price with the best material.
