  1. Wood for Smoke You can use any wood from fruit. Grape vines make a great smoke for poultry and fish.
  2. Dust I built the dust collection system using 4" diameter galvanized ducting from Lowes that saved lots of money over the stuff they sell made for dust collection systems. I also built a turbo flow that separates the particles except for dust and improves the efficiencey a bunch. These for the small shop cost $250, the parts for mine cost $35. Over a period of time you must have dust collection to save your lungs. I also use a 3M filter mask because dust from Mesquite & Cocobola & other exotic rain forest woods can really be dangerous to some people.
  3. Arrival Time I ordered mine from stock in LA, the first trucker assigned would not pick up a cantainer that had openings(need these to get thru customs). Dennis called me and appologized an said he had new trucker coming the next day. It arrived in Dallas,TX within 3 days, and they deliver to my area which is 70miles north of Dallas on certain days. It was 2 days before they delivered. The shipping container was in perfect condition, because Dennis really ships in a strong system.

  5. Sharpening Curly I use a Tormak Ginding wheel system made in Sweden. They have attachments to for all different kinds of tools to sharpen then perfect and easy. They have been rated by Wood magazines as the best there is many times. You can do it with had held diamond coated files but it takes time. I user carbide cutters for my other tools like planers and jointers which last a long time. The use Forest Woodworker II blades for my table and cutoff saw that have C4 carbide teeth. They will sharpen and replace teeth if necessary for very resonalble cost.
  6. Brisket Brines One Brisket cooker said he used Stubbs Chile-Lime Rub with: 2 cloves of garlic, 1 Jalapeno pepper, 1 Habanero pepper, 1 Yellow onion, 5 whole peeled limes, Olive oil as needed. Combine ingredients into blender with enough olive oil to make slurry mixture and rub all over the brisket & put in refer overnight. I recall one person saying they soaked their brisket overnight covered with real Coke & cooked next day....
  7. Cocobola You can do a Google on Cocobola and find that exoctic wood places sell it for at least $18.50 to $20.00 per board foot plus shipping. One in CA and one in AZ usually have best prices. I use acrylic tubes in all my Mills now so that when customers order oily woods like Cocobola will not impart any unwanted flavors to the spice. If you buy small pieces from local Wood places you will find it is priced near $40.00 per board foot.
  8. Cocobola Mills just finished. Wood facts: Cocobolo is a hardwood from Central America yielded by two to four closely related species of the genus Dalbergia. The best known and probably the species contributing most of the wood in the trade is Dalbergia retusa, a fair-sized tree, reported to reach 20-25 m in height. Because of its great beauty and high value, this species has been heavily exploited and the tree is now in danger of extinction outside of national parks, reserves and plantations. Cocobolo is a very beautiful wood, known to change color after being cut. It usually is orange in hue, with a figuring of darker irregular traces weaving through the wood. It is fine textured and oily in look and feel, and stands up well to repeated handling and exposure to water. A prime use is in gun grips and knife handles. Cocobolo is also extraordinarily dense, and even a large block of the cut wood will produce a clear musical tone if struck. Only relatively small amounts of this prized wood reach the world market and it is expensive. Cocobolo is highly favored for fine inlay work, brush backs, knife handles, musical instruments (especially guitars and basses, Alembic Inc consider Cocobolo to be their house wood and many famous players such as Stanley Clarke use such basses; but also some woodwind instruments (clarinet, oboes,..) have been successfully made using Cocobolo instead of the more usual Grenadilla black wood), pistol grips, decorative and figured veneers, bowls, jewelry boxes, and other expensive specialty items. It is also used for luxury pens. Probably the most famous example of this is from the collection of lawyer Charles Kramer of Fox Point, WI. Care must be used when working this wood, as its sawdust is dangerous; many people develop an allergy when exposed to it. A sawdust collecting system must be in operation.

    Best Wings!!

    Wings I did not turn my wings once and both sides came out the same. I also had some on the upper grill and they came out the same. I have some of those wind holders.
  10. Indirect I have the KK round one made by KK. I have used it and find that I did not get things out near edge (such as cooking lots of chicken wings) were not burned while others near the middle were still cooking. In fact I cooked with the upper grill at same time and all the wings came out the same and were perfect. Better than ever on my K9.

    Best Wings!!

    I planned to cook these wings one night but didn't get to them till the next night....so they sat in the fridge for almost 36 hours with Dizzy Pig Swamp Venom on them. WOW!! Skin was crisp, tasted great!!! Cooked at 375, indirect, never turned them....just let them cook. You couldn't tell which wings had been on the top rack vs the bottom...VERY even cooking.

    Roti fire setup

    Yummy??? I bought chicken without fluid stuffing. Soaked it over nite in salt and turbono sugar. Cooked at 375* until thigh was 175*, (going to 400* next time for crispy skin). It was great.

    Got It

    Thanks Dennis I have received my upper grill. As is normal the grill has a perfect weld job in that there are absolutely no welding drops anywhere on the grill. Every grill I got from Mexi-K had bunches of weld drops on the grill rods making it a pain to clean.
  15. Dad's Delivery My K-9 & K-1 were ordered in Oct 2003, they were delivered in Dec 2004. The K-9 had both bands installed wrong. It took me 6 months to get the replacements, and then I had to fill 3 holes in the lid and then drill 3 holes placed perfectly in the top part of the bottom. After I paid for my new OTB Supreme I had mine delivered to my place in 7 days. Richard had 50% of my money for over a year. Dennis is obviously ashless with his system!!!!!!!!

    ALERT!!!!

    ALERT!!!! Naked Whiz we got ours late in 2006 and it was the new long style. After using 1 plus 1/2 of 2 boxes, my K9 was absolutely stuffed in the bottom with ashes.

    ALERT!!!!

    Naked Whiz has test the new long ECL from Kamado and is a must read. I sent him 6 pieces of some that I got that said made in Thailand on the box because I was getting a ton of ashes, and the hexegon pieces that had not finshed burning after shutdown, would just crumble apart when touched in attempt to shake down the ash.
  19. Is It Different I had a WEBER Kettle over 20 years ago and used those charcoal side mounted holders for ribs, and chicken. They never got direct flames and really came out great. After I got my KK with the Roti attachment I tried banking the fire along the back side and got a nice result. So I ordered a pair of the WEBER holders and they left a 10" wide space which is wider than the 6" or 8" EZ-Q baskets. I did this because it reminded me of my previous efforts and also really browns up nicely. Dennis you could really make some nice SS ones that fit perfectly along the back and front; and with your improved shapes increase the amount of Lump we could load in them. I intend to try this for low and slow indirect for spare ribs, brisket, & pork buts once I get my new improved ones from Dennis. You could make them with SS sheet and punch out slots on the front & I will bet cheaper than making welded ones. Can not wait for your next improvement. Do I get the first pair for a Beta Test??????

  21. Rotie Shaft Problems Dennis as I told you the shaft that is coming is 3/4" shorter than it needs to be. Also the "L" bracket to hold the Roti motor is made from to small gauge and If you happen to order the Roti basket package from EZ-Que with both the 6" & *8" so you can do Turkey brests and also order the next size motor which is 110V only you have a problem. I found that the upgrade motor weights 3X more than the 110V/Battery motor. In trying to use the heavier motor I noticed that the "L" was flexing and this caused the motor shaft you are sending to pull out. I found with my KK Supreme that the shaft holder installed in the KK was slightly off axis in horizontal direction, which also adds to the shaft slipping out of Roti motor. I have an EZ-Que HOBE which I can use with my RV camping and also Tail Gaiting. If came with an "L" shaped motor bracket that was twice the qauge in SS over what you are using.
  22. I banked up the lump to the back half of the KK. Then put a small aluminum pan at front half of the roti swing. I used Dizzy Pig Tsunami Spin spice all over inside and out. I cooked for 1.5 hours after temp reached 350*. I checked thigh temperature at 175*. It would be nice to have a pair of SS baskets that fits the back & front half so you can have a lump fire that does not cover the total area. What do you think about that Dennis? Weber had these for their kettles so you could cook indirect without an intervening plate. I liked the result of this cook because the wings did not get cooked to crispy critters. We really enjoyed the results of this cook.
