Charles! LOL! Well, I think you're nuts for waiting sooooo long to join the KK Club! I'm glad skreef likes Super! I can't wait to see some of her cooks on it. She's really talented in her own right. And Hawk will come around. He'll learn soon enough when he needs to impress his lady friends with his culinary expertise! Cooks done over real fire really impress folks so much more than done inside on a mere stove. Then there will be that time when he cooks for her parents the first time. But, let's not get the cart before the horse! Gotta get Hawk outta high school and college first!

Thanks so much Wilbur! I appreciate it greatly. I like your description of a stir fry. It would seem that really good cooking techniques cross cultural boundaries. Like I used to tell my students, you can never go wrong if you know the basics!

ckreef - don't you just love the care package that comes with your KK? I always marvel at how complete it is and everything in is so well thought out. That little care package covers just about every eventuality, even the top vent gasket. I can't imagine burning that thing so badly I'd need to replace it. Thanks for the measurements on Super Jr. It might be relatively small, but it IS a KK and that over-engineering does add quite a bit of heft to Super. ckreef, if you enjoy Super half as much as I do Beauty! & TheBeast, you'll be wearing a smile on your face all day long. Here's to you looking like a smiling fool like me!

I have used peach several times on ribs. It's quite good on butts and briskets as well. I will also couple peach wood with a very nice peach rub made by a company I can't quite remember right now I'll track that down and post it here. -

I use Tupperware with holes drilled in the bottom to guard against moisture.

Charles - what a GORGEOUS KK! Simply strikingly gorgeous. I couldn't be happier for you. Keep those pics of that pristine, virginal white firebox because in a couple of weeks you'll never believe it was that white! What a GREAT day! Drink a couple of fingers of your favorite adult beverage for me while you sit and enjoy the burn in. You and Super Jr have a great time bonding.

tiny - what Rob says. He's THE GUY for all things CyberQ. I talked to him before I got my CyberQ and I'm glad it did. As for do I recommend the CyberQ, it certainly makes life easier on a long cook. It's certainly NOT a requirement as the KK is so well behaved at any temp you choose, but it's a nice way to get some peace of mind.

Frogs - I got mine from Dennis when I ordered TheBeast. He was gracious enough to throw in a couple of boxes. I'm down to about half a box now. I'm going to have to bite the bullet and phone Dennis and beg for the name of his supplier! Supplication is becoming easier all the time as I get older! LOL!!

Beggary - I hate to tell you this, but it was about a year ago that I got some avocado wood and I really don't remember. I only used it on a couple of cooks. I can tell you this, the folks really liked it when I told them that I smoke their brisket and pork butt using avocado. No complaints! It was a nice mid-range smoke. Didn't overpower anything. As to the specific flavor profile, I just can't remember. Sorry about that.

I was just thinking the very same, Frogs! It would look so cute all curled up on the main grate of TheBeast. I'm thinking it would make a wonderful first cook of the season! What a party idea!

Frogs - have you tried coffee wood? Excellent! Combine coffee wood with a coffee cardamom rub list here and on a brisket or butt and you have a little bit of heaven fallen to earth! I'm also partial to every fruit wood I've tried, apple, peach, avacodo, cherry, etc. I'm not real big on citrus woods. I also like pecan, oaks of all types, hickory, but I'm not big on mesquite as it can overpower a lot of cooks. I like alder for for fish and fowl. Maybe we should start a section/thread where we discuss smoking woods, where we order from, some reviews, etc. What do you think KKers? Do we already have this and once again I missed the memo?

ckreef - your pizza pies are certainly ruining my diet. I see these and I spend the rest of the day drooling until I get a slice or two or three or four of pizza! Beautiful cook!
