  1. MacKenzie - getting a KK? Darlin' I must have missed yet another memo! I thought you already had one! When is your KK scheduled to arrive? What size are you getting? Color? Habe you thought of an appropriate name? Inquiring minds wanna know! This is great! I can hardly wait to see all the uncrating pics of your new KK and especially the wonderful pics of your first KK cook! Have you thought about what your first cook on your new KK will be?

  7. I've also used relatively small onions in as smoke producers down in the firebox as well as smoking wood. Makes a nice addition.

  15. This would have never been done in my Mom's house when I was growing up. Mom had 5 kids to keep occupied and out of trouble. When Mom made apple pies, us kids got a bag of apple, a peeler each, and a quick message to play nice together. That was one hour in the day Mom got some relief! I kinda miss those days. Life was slower. Now we speed peel.
  16. Yeah, I check it out first. I actually bought your recommendation first and then went back to the Brock book. It looked interesting and that was the deal doer. Interesting did the deal. Hell, tony, I wasted more money on cheap booze and expensive dates than that book cost. I figured what the heck!

  18. Tony - they keep surprisingly well! I buy a medium sized jar about once a month and get after it. I love garlic so we use a fair amount for just us two here at ChezChef! I too have use the minced. Mea culpa, mea culpa, mea maxima culpa!

  21. tony - Chef John is one of my favorite YouTube channels. That guy is good, witty, and an icon. However, I just buy the peeled garlic. I'm a lazy schmuck! The only time I buy whole heads is when I'm roasting garlic for a party and for the guests to squeeze onto crostini and dip into balsamic vinegar as an appiteaser. Notice that I'm still one lazy schmuck as they are doing all the work!
