Tomahawk - my Anova is a wonderful tool for steaks, chops, fillets, etc. I love finishing those cuts with a smoking hot sear on Beauty! Wonderful flavor! Lately I've taken to searing first, then the Sous Vide, and then finishing on the KK. That gives a slightly different flavor that I really like. And how is that precious little baby girl? Give our best to your Bride. And again, congrats to both of you!

Woooo Hoooo! Great looking pics. Kudos and congrats to ya!

I re-use those aluminum pans all the time for drip pans. I'm so cheap I don't even waste the water or detergent between cooks! Now that's cheap!
-
Tomahawk - this is gonna be a cook for the ages! I can't wait to see this. I've run a lot of food through my Anova, but never anything like a brisket. I can't wait to see the money shots on this cook! That is one fabulous looking brisket. Talk about marbling! This should be some kind of juicy.

I tell Dennis that every one of his KKs is nothing less than Uncompromised Excellence! I personally think Overengineered doesn't do the KK justice. No matter, we all know exactly what we habe from the minute we first hit that latch and watch the lid slowly and majestically rise. I showed a dear friend TheBeast yesterday. All he could say was "Oh my!" Hogsfan - I've always admired those Cobalt Blue KKs. We're it not for the matte black pebble finish, I'd have a Cobalt Blue sitting on the patio! Congrats to both you and your Bride!

My son came into the world at 10-4! Today he's 6'5", 240 pounds and not an ounce of fat on him. He's a Spec Ops Marine Corp office that runs marathons to warm up for triathlons! He and his buddies eat like nothing you've ever seen! Poochie, start laying up food now, because if your grandson ends up like my son, sticker shock is about to be a weekly occurrence in the Poochie households! BTW, what's the young lad's name? Did I miss it somewhere? Have you thought of getting the lad a 16" KK for his first birthday?

Hogs - its really sad when your wife had to break one of your arms to make buy a KK! Congrats and welcome aboard! You are in for the treat of your young 40 years. Oh, btw, happy birthday! Now my birthday wish for you is that your arm heals in time for you to uncrate your KK and get it set up on your patio! So what size, color, accessories, etc? We have a little tradition here of naming our KKs; have you begun thinking along those lines yet? And you MUST post pics of the uncrating, your KK in its new home, and the first cook. Once again, welcome and congrats to you!

Ahhhh, man! Simply a great day and a handsome baby. All I can say is congrats to everyone, especially Mom! Gets your licks in early, because he's gonna be a big one! Congrats again!

RedStick - I use the basket splitter on TheBeast, my 32, for both a roti and for true 2 zone cooking. It's not a must have but it certainly makes life easy. Further, the basket splitters are unlike any you've seen before. All the airflow coming into the KK is forced up thru the lump pile. Other splitters don't do this. The baking stone is a must. You'll take one look at it and instantly realize what you've been missing. As for the double bottom drip pan, I personally am ambivalent at this point. I'm not a real big gravy fan, so preserving those drippings aren't really a priority to me. As for dripping getting into your KK, TheBeast is large enough such that I really don't worry about drippings not hitting the drip pan(s) I use. Additionally, I keep my KKs and their components very clean with a high temp burn after greasy cooks. Again, welcome! You're asking good questions.

Wilbur - about the only place that you won't find "enhanced" meats any more is a custom butcher shop. At least that's my experience. I've talked to the butchers at my local grocery store and they tell me even the primals they gett have been "enhanced" 99% of the time. At the prices of beef these days, that's mighty expensive saline!

Wilbur - now that's pork butt done righteously! I love that finished shot with all the bark. Absolutely a wonderful cook! Kudos to ya!

Is the 32" Big Bad too big?
CeramicChef replied to DennisLinkletter's topic in Posts for KK Shoppers
Frogs - yeah, I use my 19, Beauty!, all the time. I'm a single guys and for just me or a guest and me, Beauty! is a wonderful little grill. I do single burgers, steaks, pizzas, etc on Beauty! all the time. Beauty! can also hold a butt with no problem. Truth be told, the Beauty! can do any cook TheBeast can do, just not as much of it. -
Eggary - I'm looking forward to the pics. This should be good!
-
Tony, I have the very same injector. Works better than anything else I've found as well.
-
I'm gob smacked! Charles, you've done it again! That's one beautiful cook. Kudos all over the CK Bistro to you!
-
RedStick - it's really great to see you over here! Welcome aboard! And congrats on choosing to get a KK! It's a decision you'll never regret. I really can't help you with your questions regarding the 23. I have a 19 and a 32. What I will tell you is that the 23 really is a versatile cooker that can hold a lot of whatever your cooking. I think you got some very good advice above from Wilbur and Rob, aka 5698k. Of course, if you still have questions about size, you can always ask here or phone the King of all things KK, Dennis. Again, welcome! We're glad you're here.
-
Peter - welcome aboard! I'm really glad you've joined us! Congrats! I have a matte black pebble 32" known as TheBeast; I see you own his smaller cousin sitting on your patio. That's a very nice setup you have there. Once again, we're glad you're here. Don't be a stranger. We'd love to see pics of your cooks on the 23.

bosceaux - very nice story and a wonderful set of names for your combo. So ami right in assuming that your 32 is Naga and the 23 is Pearl? Just trying to keep the players on the field straight.

Is the 32" Big Bad too big?
CeramicChef replied to DennisLinkletter's topic in Posts for KK Shoppers
TheBeast, my KK BB 32 is the best cooker I've ever owned. I used my basket splitter, but I have also been known to just light one end of the basket, throw a deflector over the other end, and voilá, two zone! Easy peasy. TheBeast is a lifetime cooker. My son already has claimed it when I begin to assume room temperature! It will last him for his lifetime. Beyond that, well, I've got o skin in that game! TheBeast is perfect for just about any cook ranging from burgers for myself and a date all the way to a party of 20 people. -
Nice compromise on the names! Saphira Lapis. I like the sound of that. Congrats!
