    Back Ribs

    Our regular breakfast spot is also a butcher shop, grabbed some baby back slabs after we ate and started up the KK for an afternoon smoke. KK settled in around 285, I pulled 1 slab after 3 hours and it was not fall off the bone but gave a great bite. The other piece rode for another 90 mins, those fell off the bone.

  16. Those are some really nice looking Choice Tips and the price is right. Oak Ridge Santa Maria rub or SPOG and cook indirect around 250* until internal temp is around 120*, then ramp up the heat and flip the top grate over the coals and sear for 3-5 mins a side, form that nice char. Don't let it go over 130* Remember to slice against the grain and on the bias. I love this cut, best beef flavor!!!

    Few friends came over for some street tacos. Fired up Murphy to 550 and flipped the to grate over. 6 mins a side. Not too many pics but it turned out great!!
