Finally got the smash burgers how I like them after several rounds of experimentation. I got everything done before the patties went on as I am just now realizing how fast that process goes. First mix up the secret burger sauce. Fry up some onions and bacon and a splash of apple cider vinegar in the onions to make them really tasty. Grilled the sides (prosciutto wrapped asparagus-my 6 year old loves these and ate two bundles himself I am so glad I saw these a ckreef`s post and thin sliced yellow squash with bbq rub) After those are done, on go the approximately 2 and a half ounce balls of hamburger seasoned with salt and pepper and smashed only ONE time (this was key for me) Flipped, melted cheese and all the toppings I prepared plus lettuce and tomato on a brioche bun( yes I know I would be better homemade, but these are dang good. If you have a sprouts near you I would check them out they are seriously good and even better toasted a little) Then I'm sitting down to dinner. So good. Don't think I've had a better burger anywhere......ever. I think I finally figured out a formula that works for my tastes.

I just made baked beans from scratch for the first time two days ago on my kk. Blew those canned things out of the water. I need to try adding vinegar as in your recipe next time! Yours look magnificent.

Cross posted from KG...hopefully the pictures work. So I like to try new things so I thought I'd do lamb shanks in my koko kamado. I decided to go with shanks because I know they lend themselves well to low and slow cooks and I was feeling like Greek so I decided to do greek inspired lamb. In the morning I made a marinade of lemon juice, zest, garlic, salt,rosemary and olive oil. Put it in gallon zip log baga and let it rest for a few hours.. Now I also wanted to try capturing some of the drippings in some potatoes that were seasoned with most of the same things the lamb was. Then I fired up my koko kamado and threw the lamb on the top rack knowing I would be putting the potatoes on the main rack. An hour or so later I put the potatoes on. While those were cooking I made some tzatziki and marinated tomatoes, cucumbers, and red onions. I ended up having to foil wrap these guys because 3 hours wasn't enough. Eventually they got tender. I also ended up having to drain the lamb fat off the potates and fry them in a CI pan because the lamb drippings were way, way too much! Then I put this in a pita half with the marinated veggies, and sauce (the pitas were huge and I thought I would never eat 2......I did so I shouldn't have cut it in a half, it definitely would have made a better picture) sprinkled some feta on the potates and that was it!

After a lovely 17 day vacation with my family to Hawaii I am looking forward to cooking on my koko kamado again :). So I'm going to do a butt with homemade baked beans for the first time tomorrow and want to position the beans to capture the drippings from the pork. My question maybe stupid, but I'm wondering if it would be best to have the butt on the top rack and the beans on the main grate or the butt on the main grate and the beans on the lower grate? Thanks.

So even though it was a “workday” I didn't go to work because my son had to have an absessed tooth pulled. I still made dinner in a pretty quick way but have myself a little extra play time to get used to “grilling” in my new grill. Or was surprisingly easy to get it to 350 and it stayed between 350-400 during the duration of the cook. Simple pollo asado and corn on the cob. The chicken was for tacos.I went outside to check the temp and was met with this.. finishing up.... the chicken just looked so good. And Finally, wrapped in a tortilla with my famous chipotle sauce (just kidding it's super easy but my husband goes nuts for it) cheese, tomato, lettuce, chicken, and just a hint of vinegar bbq sauce. It may have just been in my head but it seemed moister to me. Oh and I made a garlic lemon cumin butter for the corn. Delicious and easy dinner!

Since I drooled over these for months I figure the least I could do was lost my experience. I want to start off by saying that I thought anyone who would drop this kind of cash on a “grill” had to be a little bit insane. I purchased an akorn in August and heck I thought anyone who bought a “regular” ceramic cooker was insane. Keep in mind I thought this having the expectation of using it about once a month when I wanted some real bbq. I knew a kamado was supposed to be more versatile than that, but I was perfectly happy with my oven and gas grill. Pretty quickly I became obsessed and found pretty much anything I could make was better on the kamado. (well I haven't tried pasta/sauce yet) I kept using it more and more. Anyway, my husband says this much money is way too much for a grill but not too much for a gift for his wife. After debating size and tile with myself for about a week I picked and hubby placed the order (he wanted credit lol!) all of my interactions with Dennis linkletter were overwhelmingly positive. What they say is right, he doesn't push the sale at all. Anyway, the shipping company was unwilling to make an accomodation after 3 pm. Luckily, my awesome mom was willing to go to my house to sign for it. On Friday at about 1 I got “the call.” and the driver was very pleasant on the phone! So I called my mom and she headed to my house to sign for it. She said that the delivery guy was awesome!! He even got the crate by the side of my house. I couldn't believe it, it was such a tight squeeze![attachment=42748:20160527_161619.jpg] mad props to the gentleman who got it safely in here!! I also had to call Dennis (who answered at something like 4 am his time! I couldn't believe that either!) because my mom didn't see the “1 box” inside the crate.[attachment=42749:20160527_165113.jpg] when I got home, I have my kiddos a snack and got to working on uncrating. Getting the crate off was super easy! I was so happy and thought I was off to a smooth start. Well then things got tricky. I think the bottom portion of the pallet must have gotten moist or something. [attachment=42750:20160527_165343.jpg] After I got the plastic wrap off of it you are supposed to pry the pieces of wood off the pallet.[attachment=42751:20160527_165803.jpg] when I went to pry the pieces off the pallet would bend before the pieces of wood. Even if I took the top piece off first. I have no idea how to resolve that issue. So , once it came time to move the komodo over the box between the legs, the wheels actually sank into the pallet. I did not get a good picture of this and then once we got it onto the ramp, the ramp also broke (it couldn't handle just the front end being on there) I'm not really sure how I could have gone about avoiding this, I have a feeling I did something wrong. My dad came over and between me, my husband,and my dad, we were able to lift it up and remove the pallet and then angle it back to remove the ramp I breathed a huge sigh of relief once it was on its wheels on the ground! And dang this thing is gorgeous. You know how everyone says pictures don't do them justice? Well I kinda brushed that off until it was right in front of me. It is just beautiful. then it was time for unloading. [attachment=42753:20160527_184611.jpg]all the grates, heat deflector, drip pan, charcoal basket, spare parts. At this point I took a picture because I noticed a little “flakiness” inside of the firebox and since I am new to ceramic I wanted to ask Dennis to make sure it was fine.[attachment=42754:20160527_190036.jpg] he let me know that this is perfectly normal and part of the process to make it look better after they cast the pieces. I just thought I'd post a picture so anyone else who orders one of these beauties knows not to worry. Plus he gave me super awesome directions for how to set it low and slow which worked absolutely perfectly btw. First off, I can't figure out how to copy this post from kamado guru So any pointers with that? On Saturday I was really looking forward to learning the vents on my kk so I wanted to do the burn in right away (I am a nerd so this was fun for me!) towards the end I did some smash burgers and stuffed mushrooms which I totally forgot to take a picture until I was eating! Saturday a family member was having a gathering so I didn't get to cook. Sunday morning I was ready to go with a fatty for breakfast (which I ended up finishing in a CI pan) and a pork butt for lunch. The pork butt was on for about 6 hours. I couldn't believe how stable this guy was. I was confident enough to go on two shopping trips and head to my parents house for a swim and when I got back it was within 10 degrees of where I left it. Pork was definitely the most moist to care, and the smoke ring was unreal. This picture doesn't show it at all. Made for awesome sandwiches. (so good I ate 2!!!)

Hello, I've looked and maybe I just can't find it but is there somewhere that has the temperature and corresponding vent settings? The vent settings in the manual do not apply to my kk.

Is there a way to remove the square from the middle of the base of the kk? I am not in a position to be able to rock my kk

How do you go about busting the pedestal? I am very unclear about this portion. Here's hoping that it comes late enough that I don't have to store it in the garage! That will make it a lot easier if I can unpack it in the driveway (no ceiling obviously). I'm just not comfortable leaving it unattended in the driveway and I am 95% certain that my side to the house will be too narrow for the crate.

They have not been accomodating of my after 3 pm request. Luckily, I have an awesome mom who can be on call tomorrow afternoon. If she is the one that signs for it, they are going to have to pull it into our garage. Am I correct in assuming that there is no way to take the crate off inside a garage? If not, is it possible to take it off after removing one side? I am still hoping to salvage the crate.
