  1. Hmmm...the recipe we do claims to be southern, but you pour the liquid hot onto the cabbage to wilt it a bit. Then chill in the fridge. No freezer involved.
  2. We do a recipe that's very similar, except for the freezer part. What is the freezer doing for you?
  3. Knowing how you like a good spin, I suspect you'd like these a lot. You could probably spin a spatched 'roo or a whole drop bear with these babies Unfortunately, I now hit the road today for a grueling month of travel. But home on weekends, and starting to look like I might even get a break for the week of the 19th.
  4. I'm thinking KK + spit rod + OctoForks is a winning combination. You've got the moist environment of a kamado, the extended distance to the firebox of the KK (which you won't find in ordinary Kamado's) giving you greater clearance for spinning, AND the OctoForks maxing the capacity and extending the range of what you can spin. Hard to beat.
  5. Here they are done after three hours. Last vid! Comments on the BB32 post first cook: everything you'd expect from a KK, but more. If anything, it seemed a bit more agile on the temps than my 23. Maybe I'm imagining it, or maybe I just need to do more cooks to confirm, or maybe it's that the gas port door is locked tight. Comments on OctoForks: the self-basting effect is noticeable. The ribs had the perfect glaze just from spinning. No sauce added or needed. Cooked a bit faster as Keith said too. These took just over three hours. And you can see from the vids what sort of capacity I have by spinning vertical. Another thing I like is...no messy grates! And I have full access to the coals the entire cook, so I can easily add more smoke wood if I want. Only one OctoForks cook under my belt, but I'm thinking Keith has something here. I see myself using these a lot.

  9. That's a lot of Fogo. Going old school today. No smoke pot or cold smoker. Just wood chunks on the coals. Somebody impaled my ribs. I'll get a better vid later. These three racks barely take up any room. Could easily fit eight racks in there. Need more OctoForks! Those are full size racks. The OctoForks easily extended to accommodate and they cleared the walls fine on spinning. First turn they hit the coals, so had to dig a small trench. Rotating cleanly now.

  11. You'll be pleased. First cook will also be my first cook with my OctoForks. Three slabs of St. Louis cut spares. Just finished measuring everything up. I may need to order another two sets of OctoForks just to get this thing anywhere close to capacity.
  12. They're college guys, so as one said, thrilled not to be eating hot pockets! Kept thanking me, but told em they did me a huge favor, so small payment. The KK always draws comments. Nothing like 'em.

Burley Hurley and his Army ROTC crew came through big time. Little Boy is searing some sous vide steaks for my new Army friends. First cook on Fat Man tomorrow. Planning to use the Octoforks for the first time as well.

  18. Burley Hurley and the crew stop by at 3 PM today for the official moving ceremony. I'll be sous-vide'ing some prime strip steaks with Oakridge Carne Crosta (awesome stuff) in the background, then sear them on my 23 as payment. Chimichurri and salt n' vinegar taters on the side. Stay tuned for side-by-side pics of Fat Man meeting Little Boy. Explosive combination...
  19. Y'all need to rethink your opinion of D.C. Metro...for now at least. I used to be a regular metro rider for my daily commute, but the system has gradually broken down and become highly irregular. Started killing people when trains were breaking down in tunnels with fires and smoke. Years of neglect and patchwork repairs finally gave way to a crash (no pun intended) program to get things up to snuff. But it requires shutting down different sections of track and stations for weeks at a time. This started last year and will supposedly be complete this fall. Until then, planned and unplanned service disruptions have resulted in yuge decreases in ridership (I must now drive to my office in Arlington ). We're all crossing our fingers that all will be well AND safe AND reliable soon, but for now, plan on Uber if you come to D.C.

  22. Yup, looked there. Dennis just called and asked the same question. No problem. Will have by the time I get home next week. Maybe transfer the roti bracket from my 23 in the meantime. Just need to do a small repair on that with some JB Weld.
