  1. Sorta low n slow. I like to do my briskets at 275. Lots of firsts: first use of coco char, smoke pot, and using the double bottom drip pan as both heat deflector and to attempt to capture some drippings.

    Running up to temp. I've been using my Maverick lately to measure grate temps and compare with the dome therm. Dome therm is usually close enough, so I'll not likely use the Mav for grate temps much anymore

    I don't monitor temp on my briskets, so will let it ride for four hours then check the bark. Stay tuned. 

  2. Recovering fluid dynamicist here, although it's been a very long time since I worked as one. But when I did work as one it was related to combustion chambers of things that fly to great altitudes.

    Here goes: to hold a steady temp means you're at equilibrium. Energy in equals energy out. Energy in is coming from two sources: ambient air via the lower vent and that being released by combustion of fuel.  Energy out is the hot air leaving the chamber and heat loss through the walls. Set the two equal to each other for equilibrium.

    Energy in air leaving the top vent + Energy lost through walls  = Energy due to combustion + Energy of ambient air in. 

    Any combination of settings that keeps that in balance will work. ckreef keeps the air leaving low and combustion energy low, thus saving fuel. Other settings work too, but are less efficient.

    It turns out that all I have are the baskets (10" with reducers) and the adjustable pin. Obviously, I am going to need to contact Dennis and order the additional pieces. My question is, What do I need? I am thinking I need - the new straight shaft, the spring loaded shaft for the left side of the basket to hook into the grill) non motor side, and the shaft to hook into the motor and the external side of the grill.  

    Yes to all three, but the non-motor side shaft isn't spring loaded. The grill socket it fits into is where the spring is. You will also need the adjustable motor bracket that fits onto the outside of the grill if you don't already have.

  4. Wow. So you definitely don't have the adjustable bracket that I did get, but you do have the solid drive shaft I didn't get, as well as the adjustable drive shaft. No idea about the single shaft position on your basket, whether that's an updated design or earlier design than mine. It does match the picture on the KK store website, though.

  5. Interesting on the basket. My basket definitely has the two shaft positions shown in the video and came with the adjustable bracket. Not sure why the difference between our two setups. You also have a 23", correct?

    My rotisserie doesn't have the 2 positions for the shaft, maybe it's no more needed.

    The adjustable bracket is the motor mount you see toward the end of the video that allows you to mount the motor and shaft tilted away from the grill, and then tightened by wing nuts as you insert the shaft into the grill. Per Dennis above, the drive shaft with this bracket can be solid vice the adjustable one at the top of this thread. In my case, I have the adjustable motor bracket, but my adjustable drive shaft doesn't work because the male (hex) and female (square) parts are different diameters. I can pull them apart without screwing. If your rotisserie basket doesn't have two shaft positions, then you probably have a basket without a reducer. I have an 8" basket with 6" reducer, so which position I use (so I'm told...haven't been able to use it yet due to the drive shaft issue) depends on whether I'm using the reducer or not.
