Recovering fluid dynamicist here, although it's been a very long time since I worked as one. But when I did work as one it was related to combustion chambers of things that fly to great altitudes. Here goes: to hold a steady temp means you're at equilibrium. Energy in equals energy out. Energy in is coming from two sources: ambient air via the lower vent and that being released by combustion of fuel. Energy out is the hot air leaving the chamber and heat loss through the walls. Set the two equal to each other for equilibrium. Energy in air leaving the top vent + Energy lost through walls = Energy due to combustion + Energy of ambient air in. Any combination of settings that keeps that in balance will work. ckreef keeps the air leaving low and combustion energy low, thus saving fuel. Other settings work too, but are less efficient. Sorry for geeking out.

I'm newish to Instagram (I know...dark ages). Don't know if I have anything worth sharing (yet), but how does one "provide the media to fill the KK page with"?
-
Thank you, @MacKenzie!
-
Looks great! @MacKenzie- can you point me to the bread recipe? Didn't see it in the bread section.
-
Glad you enjoyed! Simple, but seriously delicious.

Yes to all three, but the non-motor side shaft isn't spring loaded. The grill socket it fits into is where the spring is. You will also need the adjustable motor bracket that fits onto the outside of the grill if you don't already have.
-
Wow. So you definitely don't have the adjustable bracket that I did get, but you do have the solid drive shaft I didn't get, as well as the adjustable drive shaft. No idea about the single shaft position on your basket, whether that's an updated design or earlier design than mine. It does match the picture on the KK store website, though.
-
Interesting on the basket. My basket definitely has the two shaft positions shown in the video and came with the adjustable bracket. Not sure why the difference between our two setups. You also have a 23", correct?
-
The adjustable bracket is the motor mount you see toward the end of the video that allows you to mount the motor and shaft tilted away from the grill, and then tightened by wing nuts as you insert the shaft into the grill. Per Dennis above, the drive shaft with this bracket can be solid vice the adjustable one at the top of this thread. In my case, I have the adjustable motor bracket, but my adjustable drive shaft doesn't work because the male (hex) and female (square) parts are different diameters. I can pull them apart without screwing. If your rotisserie basket doesn't have two shaft positions, then you probably have a basket without a reducer. I have an 8" basket with 6" reducer, so which position I use (so I'm told...haven't been able to use it yet due to the drive shaft issue) depends on whether I'm using the reducer or not.

Neat idea. My avocado crazy wife and daughters would love this.

Native Chicagoan here. Been making deep dish - and iterating my recipes - for 25+ years. Extremely impressive what you've done in only two cooks. I need to check out realdeepdish.com. May end up chucking my recipes for theirs.
-
Done. Also sent you email and the WhatsApp video on this yesterday...just to help you correlate the two emails.
-
Good question. That's exactly how I'm operating as well -- moving from cover to uncovered. Looking forward to hearing from someone with an answer.

Looks awesome. I had hoped to spin a chook yesterday as well, but my roti drive shaft isn't quite right, so another time. BTW, wife is wondering why I keep calling it "chook".
-
Positive on the hex part. Looks like I need to contact Dennis.
-
Okay...how does this thing work? I'm talking about the pin that goes from square inside the motor into a hex port on the KK. The one below. When the motor spins, the two parts unscrew themselves. Also, the threads from the hex part that insert into the square part seem to be wrong. I can pull the pieces apart without unscrewing. Nothing is stripped. But the two halves don't seem to match.

Just adding my fix to the list. Hammer and 2x4 didn't work for me. But remember that crowbar that Dennis included in the crate? Wedge that in and push out gently. Worked perfectly.
-
I test fit the rotisserie for the first time yesterday and was thinking the same. You have to push hard on the left side to compress the spring there to get it to fit. Did it for me, at least.

Going to attempt my first KK pizza soon. Looking at the pics of folks' pizza cooks, it looks like nobody uses the deflector below the pizza stone in any way? In my KJ I would configure as shown here, with the deflector on the main grate just below the stone. What's the "standard" configuration in the KK?

Ooh! Pick me! Pick me!

I'm not Greek, so probably off base, but my understanding is both have a lemon and olive oil base for the marinade. Souflima is more of a straight up Pork Kabob with a lot of garlic, oregano and salt. Souvlaki is a kabob with pork (or chicken) and veg, may be lighter on the oregano and salt, and probably has other components to the marinade. That's a wild guess.

Folks asked for this recipe in another thread, so posting here as well: Ingredients:2 pork tenderloin 1 1/4 to 1 1/2 lbs each, cut into thick medallionsMarinade:1/2 cup Vegetable oil4 cloves garlic minced2 lemon juiced2 tablespoon dried oregano2 tablespoon kosher saltDirections:Marinate the medallions for 6-8 hours. Skewer and Grill. Note: I've also substituted 1/4 cup of Dizzy Pig Mediterranean'ish for the oregano and salt with good results. Serve with Tzatziki.
